Ingredients For Your Shopping List
- eggs – Don’t miss the extra egg yolk, it makes the brownies fudgier
- white sugar- divided
- melted butter
- brown sugar
- vanilla extract
- all-purpose flour
- cocoa powder unsweetened
- salt
- cream cheese- we only need a little since we are swirling it into the brownies.
- chocolate candy bars chopped- You can use pretty much any chocolate candy or candy bars. Just make sure to chop the candy into bite-size pieces. This recipe can also be a delicious way to use some of the leftover Halloween candy.
- candy eyes -optional These are usually in the baking section of most grocery stores or craft stores near the sprinkles. You often see them included in Halloween baking sections. These make it look like their are monsters peeking out of the brownies.
- food coloring optional– This is to change the color of the cream cheese to a color that looks more Halloween. Purple and neon green also give a spooky feeling.
How Can I Tell When My Brownies Are Done Baking?
These brownies can be a little tougher to tell when they are done baking. When you stick a toothpick in the center of these fudgy brownies to see if the batter is done the toothpick often is covered in chocolate candy bar.
To tell if the center of the brownies are done baking, pick up the hot pan with oven mitts. Carefully tip the pan back and forth and watch the center of the pan. If the center of the brownies is moving a lot, then they need to bake a little longer. If the brownies mostly stay in one place, they have finished baking.

Variation Ideas And Swaps
- Use Oreos to Make Monster Faces– Open up the Oreo and put eyeballs on top of the cream filling, attaching them with a little brownie batter then place the faces in the brownie batter before baking This can be even more fun with the seasonal Halloween Oreo cookies that have a green or orange filling.
- Add Candy Corn– Sprinkle candy corn or candy mallow pumpkins across the brownies right after they finish cooking while they are still hot. Don’t bake the candy corn into the batter. Add them on top at the very end.
- Add Sprinkles– Colored sprinkles in bright orange, green or purple will pop on the dark brownies.
- Vanilla Frosting– You can color 1/2 cup of vanilla frosting with food coloring and swirl it in place of the cream cheese frosting.
- Dark Chocolate– Try adding just dark chocolate candy, or white chocolate chips!
You could use a boxed brownie mix instead of the homemade brownie recipe. Once you’ve made the batter you then add the candy toppings and cream cheese to the boxed mix batter. Equipment
- 8- or 9-inch square pan
- Large Mixing Bowl
Ingredients
- 3 large eggs + 1 extra egg yolk
- ¾ cup white sugar divided
- ½ cup melted butter
- ½ cup brown sugar
- 1 teaspoon vanilla extract
- ½ cup all-purpose flour
- ½ cup cocoa powder unsweetened
- ¼ teaspoon salt
- 4 ounces cream cheese equal to 1/2 a cup
- 1 cup chocolate candy bars chopped
- candy eyes optional
- food coloring optional
Instructions
Mix The Brownie Batter
- Preheat the oven to 350 degrees. Line the bottom of the pan with parchment paper. Cut the parchment paper to be the same size as the pan by tracing the pan. Oil the sides of the pan.
- Crack and whisk 3 eggs in a medium sized mixing bowl.
- Add the melted butter, brown sugar, 1/2 cup of granulated sugar, and vanilla to the bowl and mix until well combined.
- In a second bowl combine the flour, cocoa, and salt and mix well.
- Add the dry flour mixture to the butetr and sugar mixture. Mix well until combined.
- Fold 1 cup of chopped chocolate candy into the batter.
Make The Cream Cheese Swirl
- In a large bowl with an electric mixer whip softened cream cheese for 1 to 2 minutes. Add an egg yolk to the cream cheese mixture.
- Add the remaining 1/4 cup of granulated sugar and mix. Mix food coloring into the cream cheese.
Bake The Brownies
- Add the brownie batter to the pan lined with parchment and spread evenly using a silicone spatula.
- Add spoonfuls of the cream cheese mixture spread out over the brownie batter. Drag a butter knife through the cream cheese just a little, creating brownie and cream cheese swirls across the top.
- Bake for 30 to 35 minutes, until a toothpick inserted in the center comes out clean. The brownie should be fudgy inside but not raw.
- When the brownies have finished baking but are still warm, gently push small chunks of chocolate candy, single or pairs of candy eyes, and any other candies or chocolates on top.
- Let the brownies cool completely before removing them from the pan. Then enjoy!
Notes
- To make the orange cream cheese swirl I added 5 drops of yellow and 1 drop red liquid food coloring to the cream cheese mixture. Green or purple cream cheese also gives the brownies a fun Halloween look.
- These brownies can sometimes be tough
to tell if they are cooked all the way. Pick up the hot pan
with oven mitts and slowly tip the pan back and forth just a little. Watch to see if the center of the dough moves. If it moves, the brownies need to cook more.
