Cheesecake stuffed strawberries takes juicy strawberries and fill them full of creamy cream cheese, then top them with mini chocolate chips and fresh blueberries. These yummy strawberries filled with cream cheese makes a super easy dessert that everyone loves!
I love juicy strawberries and have been treating my family to strawberry recipes for a while! Whether it’s my juicy Strawberry Shortcake Cupcakes or my Strawberry Poke Cake With A Strawberry Sauce Layer, I love using fresh strawberry flavor in desserts.
This version of cheesecake stuffed strawberries is quicker than making a full cheesecake with all the same flavors. It makes the cutest little strawberry-filled bites that everyone had trouble keeping their hands away from! I like to top them with a combination of mini chocolate chips and blueberries.

I’ve seen this dessert all around the internet in the past year. I think I saw stuffed strawberries over at The Girl Who Ate Everything first but I decided to try my own take because strawberries filled with cream cheese just sounded delicious!
Ingredients For Your Shopping List
For The Strawberries
- 16 ounces cream cheese softened, 2 blocks
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 24 Large Strawberries about 2 16 ounce containers
Toppings
- 12 blueberries
- 3 tablespoons mini chocolate chips
How To Make Cheesecake Filled Strawberries
Start by whipping together the softened cream cheese, vanilla extract and powdered sugar.
When you are finished the cream cheese mixture should be on the thick side with no lumps. If you still have small lumps of cream cheese simply whip the mixture some more.
Fill A Bag With The Cream Cheese Mixture
Fill a piping bag or a strong zip top bag with the cream cheese frosting. If you have a star tip for piping then add that to the bag first.
Place the entire bag into a tall drinking glass with the corner down in the glass before filling with cheesecake. The glass helps to open up the bag so it’s easier to fill it.
If you don’t have a star tip for piping frosting then you can just snip the corner of a bag a little. The cream cheese won’t have the pretty swirls, but it will still fill the strawberries just fine.
Once the bag is filled, twist the top well and then place it in the refrigerator for about five minutes. This will firm the mixture up a little bit.
Prep The Strawberries
While the cheesecake filling is chilling you can prep the strawberries. Wash and dry the strawberries well. Slice the green tops off the strawberries. Carefully slice the tips off the strawberries straight so the strawberries can stand on end.
How Do You Hollow Out A Strawberry?
I use a half teaspoon to scoop out the centers and hollow out a strawberry. You can also use a small paring knife or a special strawberry huller tool like this. Pat the insides and the outside of the strawberries with a towel until really dry.
Stuff The Strawberries With Cream Cheese
Line up the strawberries and fill them with the cream cheese filling. Top with mini chocolate chips and blueberries to decorate the cream cheese filled strawberries.
Variation Ideas/ Swaps
- Add peanut butter chips or add chopped nuts for a PBJ version of these filled strawberries
- Swap almond extract for vanilla extract for a filling with a different flavor!
- Add sprinkles in any color for holidays, or school colors for a graduation.
- Drizzle warmed chocolate over the top
- Add crumbled graham crackers or cookie crumbs on top. (Cookie or graham cracker crumbs tend to go soft if this dessert is made ahead.)
- Swap the strawberries for raspberries. Raspberries will take a little longer to fill, but this would be delicious!
How Do I Soften Cream Cheese?
The quickest way I’ve found to soften a block of cream cheese is to slice it and leave it on the counter. I slice cream cheese once the long way down the middle, and then about eight even times down the other direction on the block. Then spread out the pieces of cream cheese a little and set it on the counter for five minutes. It works well for any type of cream cheese filling like for these strawberry lemonade truffles or these lemon cheesecake muffins.
Softening the cream cheese helps to keep from having lumps of cheese in the filling. A higher powered electric mixer will also whip the cream cheese smoothly and quickly. A hand mixer will work just find, but I don’t recommend trying to whip this recipe by hand with a whisk.

Cheesecake Stuffed Strawberries
Ingredients
Strawberries
- 16 ounces cream cheese softened, 2 blocks
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla
- 24 Large Strawberries about 2 16 ounce containers
Toppings
- 12 blueberries
- 3 tablespoons mini chocolate chips
Instructions
- With a stand or hand mixer mix together the softened cream cheese, powdered sugar and vanilla until fluffy, 3-4 minutes.
- Add any small star-shaped tip to a piping bag and fill the bag with the cream cheese filling. Twist the bag closed and place in the refrigerator for about five minutes to help the cream cheese firm up a little more.
- Slice the green tops off all of the strawberries. Use a half teaspoon to scoop out the center of each strawberry to form a small cup. Slice the tips off each strawberry so they can stand.
- Dry both the insides and outside of the strawberries until completely dry. This is important because if your berries are too wet, the filling may slip out of the berry.
- Refrigerate the strawberries for at least 20 minutes, or until ready to serve. These berries are best when served the same day.
