Easy Sausage Breakfast Pizza

  • refrigerated pizza dough you can also use crescent rolls or you can use my homemade pizza dough
  • ground sausage I used pork sausage but you can use a chicken or turkey breakfast sausage, or any leftover sausage you might have already cooked.
  • diced tomatoes drained, you can also use fresh tomatoes
  • potatoes frozen, diced, I used frozen potato O’Brien style potatoes and frozen diced potatoes. I haven’t tried this recipe with hash browns instead of frozen diced style potatoes, let me know if you try it. You could also use leftover diced baked potatoes or diced leftover roasted potatoes like leftover cooked potato wedges chopped.
  • jalapenos chopped and deseeded (they will be way more spicy if you leave the seeds,) optional
  • eggs – Eggs form a layer over the crescent roll crust and become almost like the pizza sauce in this recipe.
  • garlic powder
  • salt
  • pepper
  • green onions sliced
  • cheddar cheese shredded

How To Make Breakfast Pizza

  1. Preheat the oven to 350 degrees. Grease the bottom of a rimmed baking sheet with spray oil or line with parchment paper.
  2. Unroll or stretch the dough gently and place it on the pan. Stretch and press the dough into the edges and corners of the pan until the dough covers the pan evenly.

  1. Place the crust into the oven and cook for 5-7 minutes or until the crust is lightly golden then remove the crust.
  2. Add sausage to a large skillet over medium heat, removing the outer casing if needed. Brown the sausage for 8-10 minutes until cooked through and golden brown, then place the sausage on paper towels to remove excess oil.
  3. Cook the frozen potatoes in a skillet with some oil according to the package directions. (see notes in the recipe card at the bottom of the page.)
  4. Top the pizza crust with ground sausage, diced tomatoes, diced potatoes and diced jalapenos (optional). Distribute the ingredients evenly on the pizza.
  1. In a medium mixing bowl crack the eggs and add the garlic powder, salt and pepper. Beat the eggs with a whisk until well mixed. Pour egg mixture evenly over the pizza.
  1. Top the pizza with shredded cheese and green onions. Cook the pizza for an additional 15-20 minutes or until the egg is cooked through. Slice the pizza into 12 pizza slices and enjoy.

Variation Ideas

Use Cooked Bacon– Cooked bacon or chopped ham can easily swap for the sausage or be added on top of the pizza.

Add Bell Peppers– fresh or frozen bell peppers is another great option that holds up well on pizza.

Swap The Cheese– We’ve used cheddar but mozzarella, provolone, Monterey Jack, colby or even pepper jack for a kick are all delicious on this pizza.

Add Mushrooms– Fresh sliced mushrooms are another great addition if you have mushroom fans at your house.

Use Up Leftovers In Your Fridge– Other toppings or bits of meat or vegetables that you may have can be added to this recipe, this recipe is a great way to use up leftovers and skip a trip to the grocery store. Make sure any meat is already cooked through, and if it is a more watery vegetable like squash, you cook the water off in a skillet before adding to the pizza to keep the crust from getting soggy.

How Long Will Breakfast Pizza Last?

Breakfast pizza will last about three days when stored in an airtight container in the refrigerator.

How Do I Reheat Breakfast Pizza?

I prefer to reheat this pizza in the oven or for a few minutes in the air fryer at 350 over reheating in the microwave.

Sausage breakfast pizza is a fun twist on breakfast that your whole family will love! Savory sausage, tender vegetables and fluffy eggs are topped with cheese on a crust made from crescent roll dough for a filling and delicious breakfast.

Ingredients  

  • 11 ounces refrigerated pizza dough 11-13 ounces, or you can use my homemade pizza dough
  • 1 pound ground sausage cooked & drained
  • 8 ounces diced tomatoes drained, about 1/2 a can or 1 cup diced fresh
  • 2 cups potatoes frozen, diced
  • 2 small jalapenos chopped and deseeded, optional
  • 4 large eggs
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 green onions sliced
  • 2 cups cheddar cheese shredded

Notes

We used frozen potatoes o’brian potatoes potatoes that were cubed into small pieces. These potatoes should be cooked so they are crispy before adding them to the pizza, or they can make the pizza too soggy. Cook the potatoes in a skillet for 10-12 minutes with a little oil over medium-high heat, or bake them on a pan at 350 for about 20 minutes. This is also a great way to use up leftover baked potatoes or leftover cubed potato wedges.
Leftover sausage can be used in this recipe. You can slice sausage links into pieces or break apart cooked sausage. If using raw ground sausage, expect it to take about 10-12 minutes extra to brown the sausage meat in a pan before adding to the pizza.
If using refrigerated pizza crust dough that can’t be unrolled and must be stretched, allow the dough to warm up on the counter for 20 minutes. This allows the dough to warm up to be stretched.
