Breakfast Sliders (With Sausage!)

These breakfast sliders with sausage are an easy way to get something warm and filling on the table for everyone at once. The sausage cooks quickly, adds plenty of flavor, and gets layered with eggs and cheese onto soft slider rolls before baking. You can prep most of it ahead to make mornings easier.

  • pork sausage – adds a lot of flavor, you can use mild or spicy sausage
  • eggs – cook to a soft scramble (80% cooked and still a little wet looking) since they’ll cook a little more in the oven
  • milk – use your favorite, I used 2%
  • butter
  • oil – used with the butter for flavor while helping keep the eggs from burning or sticking
  • salt and pepper – simple seasoning for the eggs
  • colby cheese slices – layer on the bottom to help keep the rolls from getting soggy, but you can swap in another sliced cheese
  • shredded cheese – melts over the top and helps hold everything together
  • hawaiian rolls – sweet Hawaiian rolls work great here, but any slider rolls will work
  • everything bagel seasoning – adds extra flavor on top, optional

How To Make Breakfast Sliders (With Sausage!)

Preparing The Breakfast Sliders

  1. Preheat the oven to 350 degrees. Line a baking sheet with aluminum foil or parchment paper.
  2. Slice Hawaiian rolls in half horizontally. Layer slices of colby cheese over the bottom of rolls. Adding cheese to the bottom layer helps keep the buns from getting soggy. 
  1. Place a skillet over medium-high heat. Cook sausage until no longer pink, about 8 minutes. Drain any excess grease, then remove the sausage from the pan and set to the side.
  1. In a medium bowl, add eggs, milk, salt, and pepper. Beat eggs with a fork.
  2. To the same skillet over medium heat, add 1 tablespoon butter and oil. Melt butter, then add eggs. Cook the eggs to a soft scramble (about 80% cooked) since they’ll finish in the oven and stay tender instead of drying out. Mix cooked sausage into the eggs, then remove from heat.
  1. Add egg and sausage mixture to the bottom layer of the rolls, spreading evenly to the edges. Sprinkle with shredded cheese over the eggs. Place the top of the rolls on the sliders.

Topping And Baking The Breakfast Sliders

  1. Place the top of the rolls on the sliders. Melt 1 tablespoon butter in a microwave safe bowl in the microwave for 15-20 seconds. Brush the butter onto the tops of the rolls with a silicone brush. Sprinkle Everything Bagel topping on top of the rolls.
  1. Bake the sliders for 15-20 minutes. When ready, the tops of the rolls will be lightly browned and the cheese will be melted. Serve and enjoy!

Tips For The Best Breakfast Sliders

Don’t overcook the eggs – Cook them just until soft since they’ll finish in the oven and stay tender instead of dry

Add cheese to the bottom layer – This helps keep the rolls from getting soggy once everything bakes together

Slice after baking – It’s easier to cut individual sliders once everything is melted and set

Let them sit for a minute before serving – This helps everything hold together a little better when you cut them

Breakfast Sliders Variations

Add Bacon – Sausage is delicious, but bacon is also easy to add in. I use about 6 slices of bacon diced into pieces.

Try Ham – Ham is also a great choice for the meat. It’s precooked so you can just dice it up and add it in. You can also layer slices of ham deli meat.

Add Vegetables – Diced bell pepper and diced onion go great on these sliders, but you can experiment with any toppings you would add to an omelet. I recommend dicing all vegetables small and adding them into the eggs while scrambling.

Swap The Cheese – You can use your favorite type of cheese, though it will work better if it is melty like cheddar, colby, provolone or munster. Whatever cheese you use, make sure to add a layer of cheese between the bottom part of the roll and the egg sausage mixture so the rolls don’t end up soggy.

What To Serve With Breakfast Sliders

Fresh fruit – grapes, strawberries, or melon balance out the sliders
Hash browns or potatoes – makes it feel more like a full breakfast. Try my crock pot hashbrown casserole or my roasted baby potatoes.
Sweet Pastries – a sweet treat to go along! Try my cinnamon roll casserole, the glazed blueberry biscuits or my crescent roll cream cheese danishes.
Yogurt or smoothies – an easy lighter side, try my berry smoothie or my dole whip smoothie

Can I Prep Breakfast Sliders Ahead Of Time?

Yes, these are easy to prep ahead up to 24 hours in advance if you want to get a head start. You can cook the eggs and sausage and assemble the sliders, then cover and refrigerate until you’re ready to bake. Let them sit on the counter while the oven preheats, then bake as directed.

The rolls may soften slightly, but they bake up well once heated. The layer of cheese slices between the bottom bun and the egg mixture also helps to keep them from being soggy.

If you have leftovers, they reheat well too. Just warm individual sliders in the microwave for a quick breakfast.

How Long Will Breakfast Sliders With Sausage Last?

Expect these sliders will last for about three days if stored in an airtight container in the refrigerator.

When reheating leftovers, warm individual sliders in the microwave for about 30–45 seconds. You can also place several sliders on a baking sheet and warm in the oven at 325°F until heated through, likely 15-20 minutes.
