  • Great Use For Fresh Corn – I make this all year with canned or frozen corn, BUT this recipe is really tasty with fresh summer corn for this recipe. Just cut the kernels off the cob.

  • onion diced, I like using sweet onion, but you can use white onion, yellow onion or even purple onion
  • butter – we used salted butter. If you have unsalted butter, add another 1/4 teaspoon of salt.
  • corn we used frozen corn, but you can use fresh corn cut from corn on the cob or canned corn that has been drained.
  • garlic powder
  • salt
  • pepper
  • honey – If you’re unsure, start with a tablespoon of honey and taste the sweetness level. You can always add more, or serve with honey at the table for everyone’s individual tastes.
  • cream cheese – You can also use a savory flavored cream cheese or creamy spreadable cheeses such as Boursin or Laughing Cow cheese.

How To Make Skillet Honey Butter Corn

  1. Place a large skillet over medium heat. Add butter and allow it to melt. After you melt the butter place the onion in the butter and saute until soft, about 2-3 minutes.
  1. Add corn to the skillet, seasoning with garlic powder, salt and pepper. Cook for 7-8 minutes, stirring occasionally until heated through.

  1. Cut cream cheese into small pieces. Add cream cheese and honey to the skillet and stir until melted and creamy, about 2-3 minutes. Then serve immediately and enjoy!

Recipe Variations For Skillet Honey Butter Corn

Make It Spicier – Diced fresh or pickled jalapenos can give this corn a great kick! A few dashes of hot sauce can also be a great way to add a little heat to the whole portion or at the table. Or try swapping in some hot honey for regular honey.

Try Bacon Or Ham – Bacon or ham chopped up and crisped in this corn is delicious, chef’s kiss! It only takes a couple pieces of cooked bacon or a few pieces of ham to up the flavor. You can also experiment with other proteins like smoked sausage or chicken.

Add Bell Pepper Or Use Canned Mexicorn Blend” – You can add chopped bell peppers, use a canned “Mexicorn” blend (which is canned corn and peppers together)

Try Adding Paprika – A few dashes of paprika or smoked paprika can give a pop of flavor. I usually start with about 1/4 teaspoon but then add more to taste. You can also add hot paprika if you prefer.

Get Creative And Add Other Vegetables – You can make this recipe into a veggie skillet by adding chopped carrots, diced zuchinni or any other vegetables you might have in the fridge. I recommend dicing the veggies small and sauteeing the vegetables with the onion until they are soft and to remove any excess water for best results.

Make It Creamier – We’ve made this recipe just creamy enough that’s it’s perfect for every day, but don’t let that stop you from making it a little creamier. Just add a little more cream cheese an ounce at a time until you reach your desired level of creaminess. If it is getting to thick you can also thin it out with a little bit of milk.

If you like creamy corn, the corn dip with rotel isn’t the prettiest dip but oh man is it creamy and delicious!

Can I Use Frozen Or Fresh Corn For This Easy Side Dish?

You can use fresh corn easily in this recipe, just cut it from the cob.

You can also use frozen corn, just make sure the corn is hot and any water is cooked off before adding the cream cheese.

How Long Will This Sweet Corn Recipe Last?

Expect this recipe will last for about 4-5 days if stored in an airtight covered container in the refrigerator. Leftovers can be reheated in the microwave or quickly in a pan. You can use a little milk or add a little more cream cheese to make the recipe creamier or thin out the sauce if needed when reheating.

Ingredients  

  • 1/4 medium onion diced
  • 4 tablespoons butter we used salted butter
  • 16 ounces corn 16 ounces is about 3 cups Frozen, see notes
  • ¾ teaspoon garlic powder
  • ¾ teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons honey
  • 3 ounces cream cheese

Notes

We used canned corn in this recipe because that’s what we had on hand. You can use fresh corn easily in this recipe, just cut it from the cob. You can also use frozen corn, just make sure the corn is hot and any water is cooked off before adding the cream cheese. 16 ounces of frozen corn equals about 3 cups.
If you’re unsure, start with a tablespoon of honey and taste the sweetness level. You can always add more, or serve with honey at the table for everyone’s individual tastes.
You can swap bourin cheese or laughing cow cheese for the cream cheese. Laughing cow cheese you’ll need about 6 wedges, as each wedge is about 1/2 an ounce.
