M&M Brownie Mix Cookies

Perfectly fudgy, these brownie mix cookies are a delicious and quick dessert to whip up. With a few simple ingredients, you’ll have fun and delicious chocolaty cookies fast! This easy recipe is a great recipe for BBQs, potlucks and parties!

I’ve been on a bit of a kick to see how far I can stretch a good boxed baking mix. I’ve made no bake brownie truffles from brownie mix, chocolate cake mix cookies and muffins from pancake mix that make three flavors in the same pan! These deliciously fudgy cookies are my latest creation for easy shortcut treats and it starts with a box of brownie mix to make the best brownie mix cookies!

  • brownie mix use your favorite brownie box mix
  • flour– all-purpose flour
  • eggs– room temperature
  • water
  • butter melted- salted butter is ok
  • M&M candies red white and blue mix or whatever color you prefer
  • chocolate chips

Brownie Mix Size Note

This recipe was developed with a 18.3 ounce brownie mix. Some of the brownie mix brands have been decreasing the size to 16.3 ounces. If you use only 16.3 ounces of boxed brownie mix the recipe may not be as successful, so check the box carefully.

How To Make Brownie Mix Cookies

  1. Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper or lightly oil the pan with cooking oil.
  2. In a large bowl combine brownie mix and flour.

  1. Add in eggs, water and melted butter to the brownie mix and flour. Mix by hand or with a hand mixer or stand mixer until a thick dough forms, more like cookie dough than brownie batter.

  1. Gently fold in chocolate chips and ¾ cup of the M&M’s candies until mixed.

  1. Scoop out dough into one tablespoon balls. (Using a small cookie scoop is helpful for making the cookies all the same size.) Place cookie dough balls on the prepared baking sheets at least 2 inches between the dough balls.

  1. Bake cookies for 9-12 minutes. The top will start to crack and appear a little dry, but cookies will still be a little gooey in the center.
  2. Remove the pan from the oven. Immediately press the extra M&M’s into the top of the cookie to decorate

  1. Allow cookies to cool on the baking sheet for 3-4 minutes. They will continue to bake a little on a pan and will have chewy edges and a fudgy center. If you bake them a little longer or leave them on the pan too long they get crispy edges. Then move cookies to a wire rack or clean kitchen towel to finish cooling. Enjoy!

How Long Do Brownie Mix Cookies Last?

Store your brownie mix cookies in an airtight container on the counter for 3-4 days or in the refrigerator for 5-6 days. Leftovers of these cookies also do freeze well if stored in a freezer zip top bag or freezer container.

Brownie Cookie Variation Ideas

Change the color of M&M’s– You can customize these cookies to any holiday or party theme by just changing the color of the MM’s. This is great for Halloween, Christmas or Valentine’s Day!

Try Peanut Butter chips– Peanut butter is incredibly tasty swapped out for the chocolate chips in this recipe.

Swap White Chocolate Chips– White chocolate chips in a dark fudgy cookie are really delicious!

    Can u use unsalted butter

    1. Yes, absolutely you can use unsalted butter Sara. I’d recommend also adding 1/4 teaspoon of salt to the dry brownie mix and mixing it in well if using unsalted butter. Happy baking! -Kristy

  2. Have you ever frozen them so you could make several batches ahead of time, then traveled with them and served them at a family reunion the next day? (Kind of specific, but what i want to do)
    I want to know if they freeze well and bounce back as fresh.
