Crispy Roasted Yellow Potatoes

I have been making a batch of these crispy roasted yellow potatoes at least once a week for the past few months, and as a side dish they hit every time. They are the first thing to prep, then you can slide them in the oven while you make the rest of dinner.

Why We Love Crispy Roasted Yellow Potatoes

  • Goes With Everything – I make these potatoes with everything from chicken to sandwiches and sliders, and especially with smash burger tacos.
  • Leftovers Are Delicious – Whether you’re a microwave, air fryer or oven person, these potatoes always reheat well. I’ll even serve leftovers as a breakfast side or throw them in breakfast burritos. Sometimes I’ll even make two pans just to have the leftovers.
  • Alternative To Fried Potatoes – If you’re trying to eat fewer french fries, these make a great alternative. My family will still absolutely pick fries given the option (french fries are delicious, I won’t pretend this is a perfect swap every time,) but they ask for these potatoes almost as often now. These have less oil, are a little healthier, and are just as satisfying.

  • yellow potatoes – baby potatoes can also be used or red potatoes. Don’t use russet potatoes in this recipe, instead make russets into my potato wedges as they need to be soaked (or par-boiled) first.
  • olive oil – you can use your favorite high heat oil, avocado oil and canola oil also work.
  • onion powder
  • garlic powder – you can use fresh garlic, but I find this easier
  • paprika – I prefer smoked paprika, but sweet paprika works too. Skip hot paprika unless you like it really spicy!
  • salt
  • pepper

How To Make Roasted Yellow Potatoes

  1. Preheat the oven to 400 degrees. Spray a baking sheet lightly with spray cooking oil.
  2. Rinse and dry the potatoes well. Slice the potatoes into ½ inch to 1 inch chunks. Then again dry the potato chunks well with paper towels, this helps them to get crispier.
  1. To the potatoes, add olive oil, onion powder, garlic powder, paprika, salt and pepper. Mix well so the potatoes are fully coated in the oil and spices.
  1. Dump the potatoes onto the baking sheet into a single layer.
  1. Cook the potatoes in the oven for 20 minutes in the middle rack. Remove from the oven and flip the potatoes. When you are flipping, also give the potatoes a good stir, as potatoes along the edges tend to crisp up a little faster than the center.
  2. Cook the potatoes for another 20 minutes. Serve hot and enjoy!

Crispy Roasted Yellow Potatoes Variation Ideas

Change Up The Seasoning – This is my base recipe, but you can use almost any seasoning blend your family loves on these potatoes. I’ll usually start with about two teaspoons and then still add the salt, pepper and sometimes more garlic. Try a taco blend, a bbq rub blend or a good Italian blend!

Try Parmesan Cheese – Sometimes I’ll toss the potatoes at the end with a heavy sprinkle of parmesan cheese. I will also reduce the salt to 1/2 a teaspoon so they don’t become too salty.

Are Yellow Potatoes The Same Thing As Yukon Gold Potatoes?

So all Yukon Gold Potatoes are yellow potatoes, but not all yellow potatoes are Yukon Gold. Yukon Gold potatoes can be slightly sweeter and slightly drier in texture, but you can easily swap between yellow potatoes and Yukon Gold potatoes in recipes without much change. Yukon Gold is a specific type of yellow potato, just like Honeycrisp is a specific type of apple.

How Long Will Roasted Yellow Potatoes Last?

Expect these potatoes will last for about 4-5 days when stored in a covered container in the refrigerator.

Leftovers reheat in the microwave in a minute, warm in the oven on 400 for 12-15 minutes, or can be thrown in the air fryer on 385 for 3-4 minutes until warm. I usually prefer using the air fryer because they stay crispy, but also reheat fast.

These crispy roasted yellow potatoes are on my weekly rotation because they are so easy to make and go with just about everything. Perfectly golden on the outside, tender inside, and they reheat so well I sometimes make two pans just to have the leftovers.

Ingredients  

  • 3 pounds yellow potatoes also called Yukon Gold
  • 2 tablespoons olive oil
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  • Preheat the oven to 400 degrees. Spray a baking sheet lightly with spray cooking oil. Rinse and dry the potatoes well.

  • Drying the potatoes extra well helps the potatoes to get crispy and golden brown, don't skip this!
  • Slice the potatoes into ½ inch to 1 inch chunks. Then again dry the potato chunks well with paper towels.
  • Yellow potatoes have a soft, thin skin that I usually leave on. It's honestly barely noticeable and can save you a step, but you can peel it if your family prefers.
  • To the potatoes add olive oil, onion powder, garlic powder, paprika, salt and pepper. Mix well so the potatoes are fully coated in the oil and spices.
    2 tablespoons olive oil, ½ teaspoon onion powder, ½ teaspoon garlic powder, ½ teaspoon paprika, 1 teaspoon salt, ½ teaspoon pepper

Notes

Skip the foil or the parchment paper for this recipe and roast the potatoes straight on the pan. Using a layer in between can trap steam, which causes the potato to be less crispy.
Some recipes suggest roasting potatoes at 425 degrees instead of 400 and you can absolutely cook them at a higher temperature to make the potatoes a little more crispy.  I have found when I am managing the rest of getting dinner on the table, I am more likely to have my potatoes blacken too much for my family. 400 degrees usually ensures there is no black on the potatoes at all.
