These crispy roasted yellow potatoes are on my weekly rotation because they are so easy to make and go with just about everything. Perfectly golden on the outside, tender inside, and they reheat so well I sometimes make two pans just to have the leftovers.
Ingredients
3poundsyellow potatoes also called Yukon Gold
2tablespoonsolive oil
½teaspoononion powder
½teaspoongarlic powder
½teaspoonpaprika
1teaspoonsalt
½teaspoonpepper
Instructions
Preheat the oven to 400 degrees. Spray a baking sheet lightly with spray cooking oil. Rinse and dry the potatoes well.

Drying the potatoes extra well helps the potatoes to get crispy and golden brown, don't skip this!
Slice the potatoes into ½ inch to 1 inch chunks. Then again dry the potato chunks well with paper towels.
Yellow potatoes have a soft, thin skin that I usually leave on. It's honestly barely noticeable and can save you a step, but you can peel it if your family prefers.
To the potatoes add olive oil, onion powder, garlic powder, paprika, salt and pepper. Mix well so the potatoes are fully coated in the oil and spices.

Dump the potatoes onto the baking sheet into a single layer.
Cook the potatoes in the oven for 20 minutes in the middle rack. Remove from the oven and flip potatoes. When you are flipping, also give the potatoes a good stir, as potatoes along the edges tend to crisp up a little faster than the center.
Cook the potatoes for another 20 minutes. Serve hot and enjoy!
Notes
Skip the foil or the parchment paper for this recipe and roast the potatoes straight on the pan. Using a layer in between can trap steam, which causes the potato to be less crispy.Some recipes suggest roasting potatoes at 425 degrees instead of 400 and you can absolutely cook them at a higher temperature to make the potatoes a little more crispy. I have found when I am managing the rest of getting dinner on the table, I am more likely to have my potatoes blacken too much for my family. 400 degrees usually ensures there is no black on the potatoes at all.
