Frozen Lemon S’mores

These frozen lemon s’mores are a cross between an ice cream sandwich, a s’more and a lemon icebox pie! Quick to make, these make a great treat, especially to cool you down when it’s hot outside. Plus the individual portions makes this dessert easy to share.

- graham crackers
- instant lemon pudding
- milk – you can use whatever kind of milk you prefer
- whipped topping – thawed, divided like Cool Whip
- cream cheese
- marshmallow cream
How To Make Frozen Lemon Smores
- Line a 9×13 baking dish with parchment paper. Rolling the parchment paper into a ball and then flattening it out helps the paper to stay in the pan easier. Break graham cracker sheets into squares. Lay down 12 square graham crackers evenly in rows in the pan.
- In a medium sized mixing bowl add the instant lemon pudding mix, milk, and ½ cup whipped topping. Set the rest of the whipped topping to the side. Mix with a whisk until well blended.
- Spread the pudding mixture over the graham crackers in an even layer. Place in the freezer for 15 minutes.
- Place the cream cheese and marshmallow cream in a medium size bowl. Mix well with an electric mixer until smooth. Add the remaining whipped topping to the cream cheese mixture and fold it in with a silicone spatula by hand.
- Remove the pan from the freezer. Spread the cream cheese mixture over the pudding mixture. Layer the remaining graham crackers over the cream cheese mixture in rows.
- Cover tightly with aluminum foil. Freeze for 6 hours or overnight until solid.
- Remove parchment paper from pan and place on a large cutting board. With a large sharp knife cut into 12 pieces using the graham crackers as your guide. See notes in the recipe card at the bottom of the post. Then serve and enjoy! Store any extras in a freezer container.
Can I Make A Lower Sugar Version Of Frozen Lemon S’mores?
Yes you can use sugar-free instant pudding and sugar-free whipped topping to reduce the sugar in this recipe. You unfortunately can’t swap out that marshmallow that I know of or you will lose that marshmallow/merguine flavor.
Frozen Lemon S’more Variation Ideas
You can totally try other flavors of pudding in place of lemon, whether it be chocolate, strawberry, banana cream or even pistachio.
Try folding in sprinkles into the marshmallow layer to give more of a funfetti effect!
Swap out different flavors of graham crackers, try cinnamon or chocolate!
Tips For Cutting Frozen Lemon S’mores
To cut these frozen lemon s’mores straight you will need a long chef’s knife or bread knife. A bigger knife allows you to slice a little easier.
Wipe the knife with a towel or paper towel in between slicing can help you to have cleaner cuts. Pieces of the filling that attach to the knife can drag through the pie.
Running the knife under warm water before slicing can help to make a clean slice easily.
Slice along the graham crackers along the top. You can trim the edges of the s’mores if you prefer. It’s ok if you slice a little through the bottom graham cracker as you are slicing. I throw all the scraps from trimming in a bowl and allow my family to taste test with those pieces.
How Do I Store Frozen Lemon S’mores?
After slicing the frozen lemon s’mores, I like to store them in a freezer safe container with layers of parchment paper or freezer paper in between. You could also store them in freezer safe zip-top bags.
To make these lemon s’mores last longer in the freezer, wrap each s’more individually in freezer paper. You can then add a layer of plastic wrap to keep the freeze paper tightly around each s’more and keep them from becoming freezer burned for more success storing longer.
How Long Will Frozen Lemon S’mores Last?
Expect these frozen lemon s’mores will taste their best if enjoyed within 2-3 months.

- 6.8 ounces instant lemon pudding you need two boxes that are 3.4 ounces each
- 3 ¼ cups milk
- 8 ounces whipped topping divided, thawed – like Cool Whip
- 5 ounces cream cheese
- 7 ounces marshmallow cream
