  •  zucchini grated
  • large eggs
  • white sugar
  • brown sugar lightly packed
  • oil vegetable, avocado, olive or any cooking oil works
  • vanilla extract
  • flour all-purpose flour
  • baking soda
  • baking powder
  • salt
  • cinnamon
  • nutmeg
  • chocolate chips semi-sweet, plus extra for the top of the loaf
  • walnuts chopped, plus extra for the top of the loaf

How To Make Chocolate Chip Zucchini Bread

  1. Preheat oven to 325 degrees. Line a 9×5 loaf pan with parchment paper or spray the pan with cooking spray oil generously.
  2. Grate the fresh zucchini in a food processor or into a medium bowl with a box grater. With a paper towel or clean kitchen towel, pat the zucchini dry to remove excess moisture. Set the zucchini to the side.

  1. In a medium sized mixing bowl, add eggs, white sugar, brown sugar, oil, and vanilla, Mix with a silicone spatula until the sugar dissolves and is well mixed.
  1. In a large bowl add flour, baking powder, baking soda, salt, cinnamon and nutmeg. Whisk together the dry ingredients until well blended.

  1. Add half the flour mixture to wet ingredients and mix until fully incorporated. Then add the second half of the flour mixture and mix until a batter forms and the flour is fully mixed in.
  1. Fold in the grated zucchini and mix well. Add the chocolate chips and walnuts and fold them into the batter.
  1. Pour batter into the prepared pan. Add a few extra chocolate chips and walnut pieces to the top of the bread.

  1. Bake for 60-65 minutes. After 45 minutes, check to make sure bread isn’t getting too dark on top. If it is getting dark, cover the pan with foil and continue baking until fully baked in the center. The bread is done when a toothpick comes out from the center clean without batter.
  2. Remove the bread from oven and let cool for 10 minutes before removing from the pan onto a wire rack. Serve and enjoy!

Variation Ideas

Swap the chocolate chips – We’ve used semi-sweet chocolate chips but dark chocolate chips, chocolate chunks, mini chocolate chips, white chocolate chips, milk chocolate chips or peanut butter chips are all delicious.

Swap the nuts – Pecans can easily be swapped for walnuts, or if you prefer you can leave the nuts out altogether.

How Long Will Chocolate Chip Zucchini Bread Last?

Expect this chocolate chip zucchini bread will last for about 4-5 days. Store leftovers in a covered airtight container in the refrigerator to keep the freshness the longest. Leftover chocolate chip zucchini bread can be warmed in the toaster oven before serving.

This easy chocolate chip zucchini bread can be frozen. Individual slices or the entire loaf can be wrapped in freezer paper and put in a freezer zip-top bag. Expect the chocolate chip zucchini bread will taste best if eaten within 2-3 months.

Can I Use Frozen Zucchini?

You can use frozen zucchini that has already been shredded. Defrost the zucchini ahead of time or in the microwave at half power. Make sure to pat the zucchini dry well with paper towels before adding the defrosted zucchini to the batter.

Do I Have To Pat The Zucchini Dry?

Patting the zucchini dry with paper towels helps to remove excess water. This is especially important in the summertime when garden zucchini is really bursting with water. In the winter zucchini tends to not be full of quite as much water and you can sometimes get away without patting the squash dry. Too much moisture can make the bread runny though, so I usually pat my zucchini dry to ensure my loaf isn’t too wet.

Do I Need To Remove The Seeds From The Zucchini

Smaller and medium zucchini usually don’t have many if any visible seeds. If the zucchini is on the larger side it may contain a lot of seeds. I recommend scooping those seeds out with a spoon for best results.

How Many Zucchinis is 2 cups grated?

A medium sized zucchini equals about a cup of grated zucchinis. You need two medium zucchinis for two cups of zucchini. Summer zucchini from the garden can sometimes be much larger and you may need only one or one and a half zucchini.
