  • Hawaiian rolls – you can use dinner rolls or other slider buns if you prefer.
  • olive oil – just a drizzle
  • 1 pound ground beef – 90/10 or 80/20 work best, drain any excess grease from the meat. You can also use ground turkey.
  • salt
  • pepper
  • cheddar cheese – shredded
  • onion – chopped, white, yellow, sweet or purple
  • garlic – fresh cloves, minced or garlic powder
  • ketchup
  • brown sugar
  • Worcestershire sauce – You can swap in balsamic vinegar in this recipe if you don’t have any on hand!
  • 2 tablespoons butter – melted, salted
  • Sesame seeds – optional

Sometimes I’ll add a pinch or two of chili powder for a little bit of kick! Or I’ll dice up half of a bell pepper into the ground beef with the onions for a little crunch.

How To Make Sloppy Joe Sliders

  1. Preheat the oven to 350 degrees. Spray the bottom of a 9×13 baking sheet with spray cooking oil.
  2. Place olive oil in a large skillet over medium heat, allowing it to warm. Add the ground beef, salt and pepper. Break up the meat as it browns until fully cooked and no longer pink, about 3-5 minutes.
  1. Add the onions, garlic, ketchup, brown sugar, and Worcestershire sauce to the meat mixture and stir well. Cook until the onions become soft, about 2-3 minutes. Sprinkle the cheese over the meat mixture, then stir and cook until it melts and the mixture thickens, about 1 minute, then set the pan to the side.
  2. Slice the rolls in half the long way into sandwiches, a large, serrated knife works well for these soft buns.  You should have a connected sheet of bun tops and bottoms when you are finished. Place the bottom buns on the prepared pan.
  3. Spread the sloppy joe beef mixture over the bottom buns, then place the tops of the rolls over the filling.
  1. Using a silicone brush, brush the melted butter over the tops of the buns generously. Be sure to get the tops and the sides. Sprinkle sesame seeds over the top of the buns if desired.
  2. Bake for 10-12 minutes or until the buns are golden brown. Then serve and enjoy!

How Long Will Sloppy Joe Sliders Last?

Leftover sliders will keep in an airtight container in the refrigerator for up to 3 days. The assembled sliders don’t freeze well since the buns get soggy, but you can freeze the sloppy joe meat separately for up to 3 months. Just add it to fresh rolls after reheating!

Notes

You can leave the cheese out of the meat mixture if you prefer, and layer it on top of the meat mixture before adding the top bun. The cheese does help the sliders to stick together a little more. They will be a little messier if you leave it out of the recipe.
A baking sheet can be used, or a glass baking dish or ceramic baking pan can be used as long as it fits the sliders. I often line mine with aluminum foil before spraying with cooking oil, or use parchment paper and no extra oil.
