Easy No-Bake Brownie Truffles (With Brownie Mix)

These easy no bake brownie truffles only need four ingredients, are made with brownie mix, and are super fudgy! These brownie balls are a rich, gooey chocolate-filled treat that’s perfect for any holiday, party or just when you have a sweet tooth.

  • brownie mix I usually prefer a brownie mix that is fudgy, but a dark chocolate mix is also delicious.
  • chocolate syrup
  • corn syrup – See further down the article for swap ideas if you don’t have corn syrup.
  • water
  • sprinkles– match to your holiday or party!

How To Make No Bake Brownie Truffles

  1. Line a baking sheet with parchment paper. or lay out a piece of parchment paper to tranfer finished truffles to the fridge in a container or large plate.
  2. Place brownie mix in a large bowl that is microwave safe. (You won’t need the package directions for this recipe.)
  3. Heat brownie mix in the microwave for thirty seconds, then stir. Repeat for 1 1/2 to 2 minutes or until the mixture reaches 160 degrees. (Use a thermometer to check) This ensures our flour is safe to consume as raw flour without being heated should not be eaten.

  1. Add corn syrup, chocolate syrup and water to the warm brownie mix. Stir the brownie mixture well until smooth.
  2. Place sprinkles in a shallow dish with a small bowl of water nearby. Wet your hands to keep the truffle from sticking to your hands, then scoop out a tablespoon of the brownie mixture. Roll the truffle into a ball, then roll in sprinkles and place on parchment paper so they are not touching. Repeat until all truffles have been rolled.
  1. Chill for at least one hour in the refrigerator, then serve cold!

Variations And Swaps For Brownie Balls

Decorating these sweet brownie bombs is the best part!

Swap the Sprinkles– This is the easiest trick to changing up these brownie truffles. The color of your sprinkles can match any time of year! Or try mini MM’s!

Roll in Nuts– Roll the outside of these brownie balls in chopped nuts to add crunch and flavor! Chopped peanuts work, but try honey roasted peanuts, cashews, almonds, walnuts or pecans. It’s also a great way to use up bits of nuts at the bottom of the container and is the perfect treat.

Roll In Coconut– Sweetened, unsweetened or toasted coconut makes a pretty presentation, and kind of reminds me of a candy bar.

Dip In Chocolate or Candy Melts– Instead of rolling these truffles, you can dip them in chocolate instead! Most craft stores carry candy melts which are chocolate in a variety of colors. Coloring white chocolate can be very difficult as any liquid at all can cause the chocolate to seize. Follow the directions on the candy melts package to dip in chocolate.

You can also use semi sweet or milk chocolate chips with a tablespoon of coconut oil added to the mixture. Or try almond bark which is designed for dipping chocolates for the chocolate coating.

What Can I Swap For Corn Syrup

I’ve mentioned a few times corn syrup isn’t my favorite ingredient, and I don’t always keep it in my house. Corn syrup can be useful for getting the right taste and texture for no bake treats without altering the flavor.

  • Maple Syrup– Maple syrup does have a specfic flavor, but can be swapped tablespoon for tablespoon with corn syrup. Brownie truffle will taste a little more mapley along with the chocolate flavors.
  • Honey– Honey has a similar sticky consistency but sometimes can run a little thinner then corn syrup depending on your honey. Honey will also give the cookies a slight flavor of honey, but less extra flavor then the maple syrup. You may need to add an extra 1/2 tablespoon to full tablespoon of honey if your treats aren’t holding together enough for this recipe.

What’s the Difference Between Brownie Balls and Brownie Pops?

These treats are a little different than brownie pops, which are more similar to cake pops. Brownie cake pops are made with cooked brownie pieces and chocolate frosting or shortening that can also be placed on a lollipop stick. These no-bake brownie bites will not hold on a stick very easily.

How Do I Store Brownie Truffles?

These brownie truffles will last for about 5-6 days in the refrigerator if kept in an airtight container. Use parchment paper or wax paper in between any layers of truffles to keep them from sticking to each other.

Wipe away any condensation that may collect in the container as this can sometimes cause the color on the sprinkles to run after a few days.

Store brownie truffles in the freezer for up to 2-3 months. I recommend letting them thaw for a few minutes before eating.

  • 19 ounces brownie mix You need an 18 or 19 ounce mix made for a 13×9 inch pan
  • 2 tablespoons chocolate syrup
  • 2 tablespoon corn syrup
  • ¼ cup water
  • 1 cup sprinkles

Notes

Uncooked flour can sometimes carry bacteria that can cause illness. While this tends to be pretty rare, heating the brownie mix before we make the brownie truffles ensures our treats are safe to eat so don’t skip that step!
It’s easiest to use a small cookie scoop for portioning the brownie truffles if you have one.
Keep a bowl of water next to you when you are rolling the truffles for your hands and apply as needed. This helps the brownie bites from becoming too sticky.
Store truffles in the refrigerator in an airtight container until you are ready to eat. This dessert is best served chilled. If you need to double layer, add a sheet of parchment paper, wax paper or freezer paper in between the layers.
