Strawberry Brownies (With Sweet Strawberry Glaze)

Sweet glazed strawberry brownies are gooey with a soft and fudgy texture and full of strawberry flavor. The sweet glaze on top brings it all together for the perfect sweet bite.

Why We Love Strawberry Brownies

This simple dessert is also delicious with a warm brownie and strawberry ice cream, or with chocolate chip vanilla ice cream!
Ingredients For Strawberry Brownies
For The Brownies
- 15.25 ounces strawberry cake mix – I used a box of strawberry cake mix from Pillsbury, and use the same cake mix to make my strawberry cookies with fresh strawberries pink too!
- ½ cup butter melted – you can also use vegetable oil or canola oil in a pinch as a substitute, but the butter gives a better flavor.
- 2 large eggs lightly beaten
For The Glaze
- ½ cup powdered sugar
- 1 tablespoon strawberry jam – strawberry preserves can also be used
- ¼ teaspoon vanilla
- 2 teaspoons milk
- fresh strawberries for garnish, optional

How To Make Strawberry Brownies
Making The Brownies
- Preheat the oven to 350 Fahrenheit. Line an 8×8 inch square baking pan with parchment paper then set to the side.
- In a large mixing bowl add cake mix, melted butter, and eggs and mix until just combined. Expect the strawberry brownie batter will be very thick.
- Pour the batter into the prepared pan. Bake the brownies for 20-22 minutes or until a toothpick inserted in the center comes out clean.
- Let the brownies cool for 10 minutes, then lift out of the pan and let the brownies cool completely on a wire rack.
Adding The Glaze
- In a small bowl add powdered sugar, jam, vanilla, and milk. Whisk together until smooth and the powdered sugar is completely dissolved.
- Make sure the brownies are cool to the touch or the glaze will melt. With the brownies on a piece of parchment paper, pour glaze over the cooled brownies and spread evenly. Place the brownies in the refrigerator for at least 15 minutes to help the glaze set and make the brownies easier to slice.
- Cut the brownies into 16 pieces. Serve with fresh strawberries on top of the brownies (optional but delicious!) and enjoy!
What Is The Difference Between Brownies And Blondies?
Brownies are a dense, chewy cake cut into squares or bars that usually includes some variation of chocolate, sugar, flour, eggs and butter or oil. Blondies are a similarly dense and chewy cake, have a butterscotch type flavor that comes from using brown sugar and often browning the butter. Both brownies and blondies have a lot of similarities, but flavor is the main difference.
Blondies used to be called molasses brownies and actually came before chocolate brownies as molasses was a more common ingredient to have. Later the name blondies was changed from molasses brownies to show a clear difference between molasses brownies and brownies which people came to expect to be chocolate.
Are Strawberry Brownies A Brownie Or A Blondie?
These strawberry brownies technically fit in between brownie and blondie. You could call them a cake or a bar but they do have the same fudgy chewiness that a brownie has, which is why I have chosen to call them brownies instead of just strawberry bars.
How Long Will Strawberry Brownies Last?
Expect these strawberry brownies will last four to five days when stored in an airtight container in the refrigerator. WIth the glaze I have found these last best if refrigerated. The strawberry brownies can be stored on the counter if they have not been glazed.
Can I Make These Strawberry Brownies Ahead Of Time?
You can make these strawberry brownies up to twenty four hours ahead of time to enjoy for a party. I do go ahead and glaze the brownies right away after they cool.
If you try to store the glaze and brownies seperately you may need to thin the glaze with a little milk before drizzling it across the brownies as it thickens as it cools.

The brownies should stay freshest for 3-4 days stored on the counter in a covered airtight container. I’ve eaten them on day five but they don’t taste as fresh then. You can squeeze a little longer out of them if you put them in the fridge, but the glaze can sometimes also get a little gooey in the fridge. Hope that helps, and you enjoy them!
