Do I use canned pumpkin or pumpkin pie filling?

Most of my recipes use canned pumpkin which is unsweetened unless noted. Pumpkin pie filling is sweetened and spiced already and won’t work the same in recipes that use plain pumpkin puree.

Can I use fresh pumpkin puree?

You can use fresh homemade pumpkin puree in any of these recipes. Homemade pumpkin puree often has more water in it, so make sure to blot it well with paper towels so it doesn’t make the recipe too liquidy.

What if I don’t have pumpkin pie spice?

Use cinnamon with a little nutmeg and ginger, or see my homemade pumpkin spice blend below for easy swaps.
