Easy Breakfast Braid (With Crescent Rolls)

Gooey cheesy, soft eggs and crispy bacon all wrapped in warm crescent roll dough then topped with savory everything bagel seasoning for an easy breakfast braid the whole family will love.

This easy breakfast reminds me of a breakfast version of a calzone. It’s always a hit for both kids and adults whenever I make it.

  • crescent roll dough – Needs to be the package that makes 8 crescent rolls. The crescent sheets or pizza dough can also be used, either storebought or homemade pizza dough, or puff pastry dough.
  • eggs divided
  • water
  • salt
  • bacon– you can use a little extra if you like things heavy on the bacon. You can also use sliced sausage or mix bacon and sausage.
  • cheddar cheese
  • Everything Bagel seasoning

How To Make Breakfast Crescent Braid

This recipe may seem like it has a lot of steps, but I wanted to make sure I showed clearly how to wrap the braid. If you’ve never worked with dough before it may seem tricky, but I bet once you wrap a braid once you’ll be able to repeat it with all kinds of fillings!

  1. Preheat the oven to 375. Line a baking sheet with a piece of parchment paper or spray with cooking spray.
  2. Cook bacon in a large skillet until crispy over medium heat. Remove the bacon and place on paper towels to blot any excess grease. Save the bacon grease in the pan.
  3. Crack six eggs into a medium size mixing bowl. Add a tablespoon of water and a pinch of salt to the eggs. Whip the eggs with a whisk until fully mixed.
  1. Place the skillet back over medium low heat. Heat up the leftover oil from the bacon or add some pan spray. Add the eggs and stir continuously as the eggs cook until they are soft scrambled. Remove the egg from the pan.

  1. Unroll crescent dough in a large rectangle shape and press the seams together to seal and create a sheet of dough. Place the sheet of dough on top of a large baking sheet.

  1. Spread the eggs down the center of the dough.

  1. Sprinkle 3/4 cup cheddar cheese over the cooked egg mixture. Chop bacon into small pieces and sprinkle the bacon evenly over the cheese.
  1. Use a sharp knife to slice the sides of the crescent roll dough into eight even strips on each side. I like to use a pizza cutter to make quick wide strips along the long sides of the rectangle.

  1. Take a piece of dough from the right and left sides that are parallel and pull them up and across the top of the filling, pressing them together to connect them. Work down the entire length of the dough to press the strips of dough together over the filling.

  1. Crack the remaining egg in a small bowl and beat with a whisk. Brush the egg over the top of the crescent dough.

  1. Sprinkle the remaining 1/4 cup shredded cheese and the Everything Bagel seasoning across the top of the braid.

  1. Bake the braid for 10-15 minutes or until the top is golden brown. Slice and enjoy!

Breakfast Braid Variation Ideas

Swap The Meat – Try cooked breakfast sausage crumbles, ham, or even pieces of chicken or steak. Cooked chicken sausage or turkey sausage is also delicious. You can use last night’s leftover or your favorite protein in this braid.

Make It Vegetarian– You could easily make this vegetarian by leaving out the bacon entirely.

Add Vegetables– I didn’t add many vegetables in this version but you can totally can. I recommend sauteeing the vegetables (and seasoning them a little) in the skillet a little bit to remove a little water from them before adding them so the braid doesn’t become soggy. If you add lots of extra veggies it can sometimes take a little longer to bake, more like 20-25 minutes if the center is thicker..

Try Different Cheeses– I’ve used cheddar cheese, but most shredded cheese would work in this braid. Try Colby, Mozzarella or Monterey Jack. You could also use cheese with a stronger flavor like goat cheese, swiss, gruyere or feta, or get creative with your own favorite flavor.

What To Serve With A Breakfast Crescent Braid?

My family will often add fresh fruit, orange juice or maybe even a fruit smoothie with this dish to round out the meal. If we are making a larger breakfast we might add a sweet breakfast option like my pancake mix muffins, crescent roll cream cheese danishes or my sweet glazed blueberry biscuits. Sometimes we will also make a breakfast potato as a side dish, like this cheesy slow cooker hashbrown casserole.

How Long Will A Breakfast Crescent Braid Last?

Expect this breakfast braid will last about three days when stored in an airtight container in the refrigerator.

Leftovers of this breakfast braid also freeze ok when wrapped in a freezer zip-top bag.

You can reheat leftovers from frozen in the microwave, oven or air fryer. I suggest starting with just a couple of minutes, as the reheating time can vary a lot depending on how large of a piece you have.

Notes

What Does Soft Scrambled Eggs Mean?

Soft scrambled means cooking the scrambled eggs until they are just cooked but are still a little soft and wet in appearance.
We soft scramble the eggs in this recipe as they will cook more in the oven. If you cook the eggs until all the liquid is gone in the eggs, they may taste a little dry after being baked into the braid.

How Many Does this Recipe Feed?

My family typically will each eat two slices each of this breakfast braid for Sunday brunch, so if I have more people over I might double the recipe and make two braids. If we have a lot of other sides though they may only eat a single piece.

    This was super easy and a must from now on when it comes to brunch. Question have your tried freezing it? I have a college kid and would love to make for him to enjoy as wel

    1. I am so glad everyone enjoyed it Amy! I have not personally tried freezing this recipe, but I bet it would freeze well. It’s similar to a breakfast hot pocket, and those type of meals do freeze well. I would probably freeze it in portions wrapped in freezer paper or aluminum foil in a freezer bag. Bet it would reheat well in the air fryer if you have one! We heat frozen breakfast burritos in the air fryer all the time (and the recipe is coming soon. ๐Ÿ™‚ )

    Wanted something different for breakfast for a change. Was actually brunch when I made it. I just made this for four people, so we each had two portions. Made it exactly like the recipe. It was delicious, everyone loved it. I will make this again.
