Easy Strawberry White Chocolate Chip Cookies (with Fresh Strawberries!)

Sweet pink strawberry white chocolate chip cookies are gooey, buttery and delicious! Fresh strawberries are mixed right into the cookie dough along with white chocolate chips that give these cookies a gourmet feel! No one will know these easy strawberry cookies started with a box of cake mix!

Ingredients For Strawberry White Chocolate Chip Cookies

  • strawberry cake mix
  • butter unsalted, melted
  • eggs lightly beaten, if you are mixing by hand it’s always a little easier to beat the eggs first before adding. If you are using an electric mixer it’s not an issue with this recipe to add the cracked eggs straight to the bowl.
  • lemon juice – fresh or bottled lemon juice both work fine
  • fresh strawberries chopped, divided
  • white chocolate chips divided, can also use any vanilla, yogurt or white baking chip.

Cake Mix Note

This recipe was developed with a 15.25 ounce cake mix. Some of the cake mix brands have been decreasing the size to 13.25 ounces. If you use only 13.25 ounces of cake mix the recipe may not be as successful so check the box carefully.

You could also add 1/4 cup from a second box of mix to make up the extra missing 2 ounces from the smaller-sized box. Some readers have reported they have added 1/4 cup of flour extra to make up the difference. I have not tested this in every recipe here, so it may not be successful for every recipe on this site.

How To Make Strawberry White Chocolate Chip Cookies

  • Preheat the oven to 350 degrees. Line your favorite baking sheets or cookie sheets with parchment paper.
  • In a large bowl, add cake mix, melted butter, eggs, and lemon juice. Stir together to form the cookie dough until fully combined. You can use a hand mixer, a stand mixer or just mix by hand with a silicone spatula. Expect the dough will be a little sticky, but trust the process for this strawberry cookie recipe.
  • Fold in ½ cup chopped strawberries and 1 cup of white baking chips into the cookie dough. Stir until just mixed.
  • Scoop cookie dough into two tablespoons cookie dough balls. (A medium cookie scoop is helpful!) Place cookie dough balls at least two inches apart on the baking sheet. Place the remaining chopped strawberries and white chocolate chips into the top of the cookie dough balls for prettier strawberry cake mix cookies.

  • Bake cookies for 10-11 minutes. The edges of the cookies should just start to be golden brown, but watch them closely. These white chocolate strawberry cookies should be a little underbaked, but not raw.

  • Allow the cookies to cool for about ten minutes on the hot pan, then transfer cookies to a wire rack to finish cooling. Then enjoy the homemade cookies!

Variation Ideas

  • Try Other Chocolate Chips– White chocolate chips are delicious, but chocolate will taste like chocolate-covered strawberries! Try dark chocolate chips, semisweet chocolate chips or milk chocolate chips to make strawberry chocolate chip cake mix cookies. Or if you can find them, the seasonal cheesecake chips or yogurt chips give the cookie a strawberry cheesecake flavor. Another option is to use white chocolate chunks!
  • Swap For Chopped Chocolate– I like to use cookies as an opportunity to use up leftover chocolate we may have around the house, usually leftover from holidays. Our chocolate Easter bunnies for example almost always become cookies, ha! You can chop up any chocolate you have or even purchase white chocolate bars and chop that up instead of chips.
  • Add Nuts– Pecans are my favorite nuts to add but pistachios or walnuts are also delicious.

How Long Will Strawberry White Chocolate Chip Cookies Last?

Expect these cookies will last for about four days, but will taste best when eaten within two to three days. Store leftover strawberry white chocolate chip cookies in a covered airtight container in the refrigerator.
