Strawberry Fruit Pizza (With Glazed Strawberries)

This strawberry pizza has a sweet buttery sugar cookie crust topped with cream cheese frosting then finished with fresh glazed strawberries for the sweetest dessert. Strawberry pizza is great for a party or for strawberry season, and is the best cross between a strawberry pie and fruit pizza!

For The Sugar Cookie Crust

  • sugar cookie dough softened, store bought pre-made cookie dough

For The Cream Cheese Frosting

  • cream cheese softened, I recommend full fat cream cheese
  • butter softened, salted
  • powdered sugar also known as confectioners’ sugar
  • vanilla extract

A container of premade cream cheese frosting can be substituted to save time for the frosting in this recipe if you prefer. You’ll need about a cup and a half of frosting. Most store bought frosting is 16 ounces or two cups. You can use all 16 ounces and add a thicker layer of frosting if you prefer.

For The Strawberry Layer

  • fresh strawberries divided
  • water
  • sugar – white, granulate sugar
  • strawberry gelatin powdered mix like strawberry JELLO, but a store brand works just fine too
  • cornstarch

How To Make Strawberry Pizza

Making The Sugar Cookie Crust

  1. Preheat oven to 350 degrees Fahrenheit. Line a 10 x 15 inch baking sheet pan (cookie sheet with a rim) with parchment paper or spray lightly with cooking oil.
  2. Rub a teaspoon of oil onto your hands and spread cookie dough out evenly on the greased pan. This will keep the dough from sticking and make it easier to spread. It will feel like there isn’t quite enough dough, but trust the process and keep working it into the pan until it is spread evenly.

  1. Bake cookie dough for 17-18 minutes or until the crust just starts to turn a light golden brown around the edges. Let the cookie cool on the pan, about 15 minutes.

Making The Cream Cheese Layer

  1. Add the cream cheese and butter to a mixing bowl. Cream together with an electric mixer until smooth. Add a cup of the powdered sugar and the vanilla, then mix with an electric mixer until the cream cheese mixture is smooth. Add the second cup of powdered sugar to the mixture and again mix until fully smooth.
  2. Spread the cream cheese frosting evenly on the cooled crust once the cookie is cool to the touch.

Making The Berries Layer

  1. Dice up four medium strawberries (about 1/2 cup) diced strawberries) and place them in a large bowl, removing the stems. Smash the strawberries with a large spoon or the back of a measuring cup. Then set to the side.

  1. Slice the remaining strawberries the longest direction in slices that about ¼ inch thick. Trim the stems away as you slice. Set the sliced strawberries to the side.
  2. In a medium saucepan over medium heat, add gelatin, water, sugar, cornstarch and smashed strawberries. Cook the strawberries stirring continuously for about 5 minutes until a thick glaze forms. Remove the strawberry glaze from the heat and cool for about 15 minutes until it is no longer hot, but still a little warm so it spreads easily.
  1. Gently add a thin layer of the strawberry glaze to the cream cheese frosting on top of the cookie crust. Add sliced strawberries to the strawberry sauce a few at a time, then layer strawberries on top of the frosting in rows. Spoon any remaining glaze over all the strawberries.
  1. Place the entire pan in the fridge for 20 minutes to chill or until the sauce fully sets. Then slice and enjoy!

Can I Prep Strawberry Pizza Ahead Of Time?

Yes, you can make this strawberry pizza the night before or up to 24 hours in advance and store covered in the refrigerator.

Variation Ideas

Try Other Flavors Of Fruit – I haven’t tried swapping out the fruit, but I don’t see any reason why you couldn’t make another flavor as long as you swap out the gelatin flavor to a flavor that matches or at least tastes good together (like raspberry jello with blueberries would still taste great.)

Keep in mind if the color of the JELL-O may also effect the color of the glaze, though you could of course add food coloring if you prefer. Try raspberry, blackberry, blueberry, peach, or even mix a couple flavors of berries.

Make A Gluten Free Cookie Crust – I have made my cutout sugar cookie recipe using gluten free flour for a friend with a gluten intolerance and they came out delicious. Swap out a high quality gluten free flour cup for cup for regular flour, and you can use it as the base of this recipe. Most Jello is naturally gluten free, though I have found if I am making a recipe for a friend with an intolerance it’s always best just to ask first if their are any allergy concerns.

Can I Use Frozen Strawberries?

Frozen strawberries tend to get way too mushy on this pizza and can make the sugar cookie mushy. Fresh strawberries will have a better texture when you layer the slices, I don’t recommend using frozen strawberries.

Can I Freeze Strawberry Pizza?

This easy strawberry pizza recipe does not freeze well. The strawberries tend to get too mushy and the liquid can make the cookie crust soggy. I recommend enjoying this dessert fresh.

How Long Will Strawberry Pizza Last?

Expect this strawberry pizza will last for about 3 days when stored in covered airtight containers in the refrigerator.

Equipment

  • 1 10 x 15 inch baking sheet use a rimmed metal cookie sheet, not a casserole dish
  • 1 cooking oil vegetable oil, canola oil, avocado oil and avocado oil all work, we just use a little so our hands don't dry out the dough too much
  • 1 Measuring cups and spoons
  • 2 Large Mixing Bowl
  • 1 Electric Mixer hand mixer or stand mixer
  • 1 Cutting board
  • 1 Sharp knife
  • 1 Large spoon
  • 1 medium saucepan

For The Cream Cheese Frosting

  • 8 ounces cream cheese softened, one block
  • ½ cup butter softened, salted

Notes

Premade cream cheese frosting can be used instead of the frosting included if you prefer. You’ll need about a cup and a half or 12 ounces of frosting. Most frosting comes in 16 ounce containers. You can either have leftover frosting or add a thicker layer of frosting and use the full 16 ounces (2 cups) of frosting.
Don’t add the cream cheese frosting to the cookie until the cookie has completely cooled on the pan or the frosting can melt off the cookie.
When placing the strawberries on the frosting, placing either all sliced side up or all seed side up can give this dessert a prettier look.
