Strawberry pizza is a dessert pizza that starts with a sugar cookie dough that is topped with frosting and glazed fresh strawberries! This sweet dessert is a fun twist on both fruit pizza and strawberry pie.
Equipment
1 10 x 15 inch baking sheet use a rimmed metal cookie sheet, not a casserole dish
1 parchment paper
1 cooking oil vegetable oil, canola oil, avocado oil and avocado oil all work, we just use a little so our hands don't dry out the dough too much
2cupspowdered sugaralso known as confectioner's sugar

For The Strawberry Layer
1poundfresh strawberriesdivided

½cupsugar
3ouncesstrawberry gelatinpowdered mix like JELLO

Instructions
Making The Sugar Cookie Crust
Preheat oven to 350 degrees Fahrenheit. Line a 10 x 15 inch baking sheet pan (cookie sheet with a rim) with parchment paper or spray lightly with cooking oil.
Rub a teaspoon of oil onto your hands and spread cookie dough out evenly on the greased pan. This will keep the dough from sticking and make it easier to spread. It will feel like there isn’t quite enough dough, but trust the process and keep working it into the pan until it is spread evenly.
Bake cookie dough for 17-18 minutes or until the crust just starts to turn a light golden brown around the edges. Let the cookie cool on the pan, about 15 minutes.
Making The Cream Cheese Frosting
Add the cream cheese and butter to a mixing bowl. Cream together with an electric mixer until smooth. Add a cup of the powdered sugar and the vanilla, then mix with an electric mixer until the cream cheese mixture is smooth. Add the second cup of powdered sugar to the mixture and again mix until fully smooth.
Spread the cream cheese frosting evenly on the cookie crust once the cookie is cool to the touch.
Making The Strawberry Layer
Dice up four medium strawberries (about 1/2 cup) diced strawberries) and place them in a large bowl, removing the stems. Smash the strawberries with a large spoon or the back of a measuring cup. Then set to the side.
Slice the remaining strawberries the longest direction in slices that about ¼ inch thick. Trim the stems away as you slice. Set the sliced strawberries to the side.
In a medium saucepan over medium heat, add gelatin, water, sugar, cornstarch and smashed strawberries. Cook the strawberries stirring continuously for about 5 minutes until a thick glaze forms. Remove the strawberry glaze from the heat and cool for about 15 minutes until it is no longer hot, but still a little warm so it spreads easily.
Gently add a thin layer of the strawberry glaze to the cream cheese frosting on top of the cookie crust. Add sliced strawberries to the strawberry sauce a few at a time, then layer strawberries on top of the frosting in rows. Spoon any remaining glaze over all the strawberries.
Place the entire pan in the fridge for 20 minutes to chill or until the sauce fully sets. Then slice and enjoy!

Premade cream cheese frosting can be used instead of the frosting included if you prefer. You'll need about a cup and a half or 12 ounces of frosting. Most frosting comes in 16 ounce containers. You can either have leftover frosting or add a thicker layer of frosting and use the full 16 ounces (2 cups) of frosting.Don't add the cream cheese frosting to the cookie until the cookie has completely cooled on the pan or the frosting can melt off the cookie.When placing the strawberries on the frosting, placing either all sliced side up or all seed side up can give this dessert a prettier look.The recipe instructions have been edited to simplify the process March 2025, but the recipe till is the same.
