This strawberry pizza has a sweet buttery sugar cookie crust topped with cream cheese frosting then finished with fresh glazed strawberries for the sweetest dessert. Strawberry pizza is great for a party or for strawberry season, and is the best cross between a strawberry pie and fruit pizza!

- sugar cookie dough softened, I used pre-made cookie dough. I recommend softening the cookie dough on the counter for 20 minutes before spreading it for best results. You could also use my favorite sugar cookie recipe as the base.
- fresh strawberries divided
- water
- sugar
- strawberry gelatin powdered mix like strawberry JELLO
- cornstarch
- cream cheese softened, one package cream cheese that is sold in a block
- butter softened, salted
- powdered sugar – (also called confectioners’ sugar)
- vanilla extract
How To Make Strawberry Pizza
- Preheat oven to 350 degrees Fahrenheit. Line a 10 x 15 inch baking sheet pan (cookie sheet with a rim) with parchment paper or grease pan generously with cooking spray.
- Rub a teaspoon of oil onto your hands and spread cookie dough out evenly on the greased pan. This will keep the dough from sticking and make it easier to spread. It will feel like there isn’t quite enough, but trust the process and keep working it into the pan until it is spread evenly.
- Bake cookie dough for 17-18 minutes or until the crust just starts to turn a light golden brown around the edges. Let the cookie cool on the pan, about 15 minutes.
- While the sugar cookie cools cream together cream cheese, and butter until smooth. Add a cup of the powdered sugar and the vanilla, then beat with an electric mixer until smooth. Add the second cup of powdered sugar to the mixture and again mix until fully smooth. Spread the cream cheese frosting evenly on the cookie crust once the cookie is cool to the touch.
- Then dice up four medium strawberries (about 1/2 cup) diced strawberries) and place them in a large bowl. Smash the strawberries with a large spoon or the back of a measuring cup.
- In a medium saucepan add gelatin, water, sugar, smashed strawberries and cornstarch over medium heat. Mix the mixture well together until combined and it begins to thicken; about 5 minutes. Remove the strawberry sauce from heat and cool for about 15 minutes. It should still be warm but not hot. If it cools completely it will set too quickly.
- Slice strawberries the longest direction that are about ¼ inch thick, removing any stems. Add sliced strawberries to the strawberry glaze a little at a time, and layer strawberries on top of the frosting. Place any slices seed side down for a prettier look. Spoon any remaining glaze over all the strawberries.
- Place the entire pan in the fridge for 20 minutes to chill or until the glaze sets. Then slice and enjoy! This is also delicious with a dollop of Cool Whip or whipped cream on top.
How Long Will Strawberry Pizza Last?
Expect this strawberry pizza will last for about 3 days when stored in covered airtight containers in the refrigerator.
Can I Prep Strawberry Pizza Ahead Of Time?
Yes, you can make this strawberry pizza the night before or up to 24 hours in advance and store covered in the refrigerator.

Can I Use Frozen Strawberries?
Frozen strawberries tend to get way too mushy on this pizza and can make the sugar cookie mushy. Fresh strawberries will have a better texture when you layer the slices, I don’t recommend using frozen strawberries.
