Ingredients For The Potatoes

  • russet potatoes peeled and cut into chunks, see notes in the recipe card for how many potatoes to use
  • garlic minced, If using garlic powder use 1 teaspoon. If using fresh garlic cloves mince 4 cloves.
  • cream cheese softened, I used full fat cream cheese for a creamier potato, but you can use a reduced fat cream cheese
  • butter softened, salted butter is fine
  • sour cream
  • heavy cream can also use half and half. Milk can also be used in a pinch, but the potatoes will taste creamier with heavy cream
  • parmesan cheese shredded, divided

Ingredients For The Seasoning

  • 1 teaspoon basil
  • 1 teaspoon parsley
  • 1 teaspoon oregano
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper

How To Make Garlic Cream Cheese Mashed Potatoes

  1. Wash, peel and cut the potatoes into large 2 inch chunks. Place the potatoes in a large pot and cover with water. Bring the water to a boil and boil the potatoes for 15 to 20 minutes until they are fork tender.
  2. Transfer the cooked potatoes to a colander to drain the potatoes and rinse with cold water. Allow to cool for at least 10-15 minutes.
  3. Preheat the oven to 350 degrees and grease a 9×13 baking dish with nonstick cooking spray.
  4. Place the cooked potatoes in a large mixing bowl. Add garlic, cream cheese, sour cream, and heavy cream to the bowl. Use a potato masher or hand mixer to mash the potatoes and blend until smooth.

  1. Add 3/4 cup of parmesan cheese, basil, parsley, oregano, salt and pepper to the potatoes. Blend until the spices are well mixed into the potatoes.

  1. Spread the mashed potatoes with cream cheese into the prepared baking dish and sprinkle with the remaining 1/4 cup of parmesan cheese and cover with aluminum foil. Bake for 30 minutes until warm and gooey, then serve and enjoy!

Can I Prep These Mashed Potatoes Ahead Of Time?

Yes you can absolutely prep these creamy mashed potatoes ahead of time. Prep everything and place in the casserole dish. You can then store the casserole dish in the refrigerator for up to 24 hours before baking again.

If you make the potatoes ahead of time and leave them in the fridge, expect it will take a little more time to heat the potatoes all the way through. I would expect closer to 30-40 minutes as the potatoes and pan has to heat from ice cold instead of room temperature.

How Long Will Garlic Cream Cheese Mashed Potatoes Last?

Expect these mashed potatoes to last about 3-4 days in the refrigerator. Store any leftovers in a covered airtight container. You can also use leftover mashed potatoes to make crispy potato pancakes.

  • 1/2 cup butter softened
  • 1/2 cup sour cream
  • 1 cup heavy cream can also use half and half
  • 1 cup parmesan cheese shredded, divided

Notes

3 russet potatoes is about a pound, so for 3 pounds of potatoes you’ll need about 9 russet potatoes.
3 pounds of Yukon gold potatoes or red potatoes can also be used in place of the russets.
Garlic cloves are each about 1/2 teaspoon of minced garlic, so for 3 pounds of potatoes, you would need about four cloves of fresh garlic.
