I can never decide between sprinkles and pecans, so my graham cracker toffee gets both, half and half on the same pan. If homemade toffee has always felt hard to make, this is the one to start with. You’ll boil the toffee for just 3 minutes, and you can leave the candy thermometer in the drawer.

Why We Love Graham Cracker Toffee
- No candy thermometer needed – Just a 3-minute boil and a quick bake.
- Great for gifting – This toffee freezes for up to 3 months, so you can get ahead of the holiday rush.
- Everyone gets their favorite – Top half with sprinkles and half with nuts, or get creative with the toppings!

Kristy’s Tips For The Best Graham Cracker Toffee
Stay by the stove – The toffee moves fast once it starts boiling. Walk away and it can end up undercooked (gritty or chewy) or overcooked (burned tasting).
Need it to set faster? – Cool it on the counter for 30 minutes, then the fridge for 30 minutes, then the freezer for 30 minutes. This shaves about 30 minutes off the chill time.
If your chocolate chips won’t melt – Readers of my saltine toffee have had chips seize or not melt, especially Toll House. Instead, microwave the chips with 1/2 teaspoon coconut oil (or another cooking oil) at half power, stirring every 30 seconds until smooth, about 2 to 3 minutes. Pour it over the toffee when you’d normally add the chips. Keep all water away, even a damp spoon, or it can seize.
How To Make Graham Cracker Toffee
- Preheat the oven to 400°. Line a 10×15 rimmed baking sheet with aluminum foil and spray generously with spray cooking oil or line with parchment paper.
- Lay graham crackers in a single layer on the baking sheet.

- Place a medium saucepan over medium-high heat. Add brown sugar and butter and bring to a rolling boil, where the whole surface is bubbling. Boil for 3 minutes, stirring constantly, until the mixture is lighter in color. Remove from heat and immediately stir in the vanilla.

- Pour the toffee over the crackers and spread it into an even layer. Bake for 5 minutes, then remove the pan and turn the oven off.

- Sprinkle chocolate chips over the toffee and return the pan to the warm (turned off) oven for 1 minute. Remove and spread the melted chocolate into an even layer.

- Immediately sprinkle any optional toppings onto melted chocolate if desired.
- Let the toffee cool for 30 minutes on the counter, then chill in the refrigerator for 2 hours or until completely cool and set.
- Cut into about 24 pieces with a sharp knife or break into random bark pieces. Then enjoy!

Graham Cracker Toffee Variation Ideas
- Make It Holiday Ready – Top the chocolate with crushed-up candy canes, festive sprinkles, or red and green M&Ms. A swirl of white chocolate or colorful candy melts drizzled over the top makes it look extra pretty on a cookie tray.
- Go Nutty or Crunchy – Pecans are my go-to, but sliced almonds or any chopped nuts you love work great. For even more toffee flavor, sprinkle on some Heath bar toffee bits. A pinch of flaky sea salt balances out the sweetness, too.
- Turn It Into S’mores – Graham crackers are halfway to s’mores already! Press mini marshmallows into the warm chocolate, or start with chocolate graham crackers for an extra chocolatey base.
- Pick Your Chocolate – I love semi-sweet or dark chocolate here because they balance the sweet toffee. White chocolate is tasty too, and milk chocolate works if that’s your family’s favorite. Want a twist? Mix in peanut butter chips or butterscotch chips with the chocolate chips.
- Switch Up the Base – If you love this, try my saltine cracker toffee for a saltier version. Thin flat pretzels and buttery Ritz crackers make great toffee too.
Why Is My Saltine Cracker Toffee Chewy?
Usually, chewy toffee means it needed to boil just a little bit longer. Keep it at a rolling boil across the entire surface of the toffee mixture, and stay close by, because this one moves fast.
If your toffee was crunchy at first and turned soft or chewy later, it’s likely the graham crackers. They’re more delicate than saltines and soften the longer they sit on the counter, especially in a warm kitchen. Storing the toffee in the fridge helps keep that crunch.
Can I Make Graham Cracker Toffee Ahead Of Time?
This toffee freezes really well for up to 3 months, so you can make it well before the holiday rush. Store it in an airtight container or freezer bag, then thaw it in the fridge while still sealed so condensation doesn’t make it soggy.
How Long Will Graham Cracker Toffee Last?
Keep it in a covered, airtight container. It lasts about a week on the counter, but the graham crackers slowly soften at room temperature (still tasty, just less crisp), especially if your house is on the warm side or you live in a warmer climate. For the best crunch, store it in the fridge, where it will keep for up to a month, or freeze it for up to 3 months.
