S’mores Rice Krispies Treats

Gooey, chocolaty, buttery, these S’mores Rice Krispies treats bring everything you love about the classic campfire treat into an easy to make bar that’s perfect for sharing at potlucks, parties, camping or just enjoy for an easy dessert.
My daughter’s Girl Scout troop was having it’s end of the year awards ceremony complete with potluck. I knew it was the perfect way to bring a little taste of camp to help the girls celebrate without the fuss of a campfire, as we were at a public park. They sure flew from the container, these treats are perfect for spring and summertime!
Why We Love S’mores Rice Krispies Treats
- No Bake Treat – When it’s hot outside, I love a good no bake style treat to make for my family and friends that keeps the heat out of the kitchen. I live in Arizona and we have plenty of days so hot they’ll fry and egg!
- Twist On a Classic Treat – When you bring these s’mores Rice Krispies treats to a party or to share, everyone will perk up a little bit more. These don’t take very long to make and are so much more gooey and chocolaty than the packaged Rice Krispie treats that they’re worth making homemade! We used to make cereal treats with a mix of cereals all the time growing up, and this flavor combo is fire!
- Kids Can Help Cook – These no bake treats are easy enough that the kids can totally help make them, even beginner cooks. Let kids help sprinkle the toppings and older kids can melt the butter and marshmallows. Just measure out the ingredients before you get started, and make sure you have a big bowl to mix everything!
Ingredients For S’mores Rice Krispie Treats Recipe

- butter
- vanilla
- salt
- mini marshmallows – 20 ounces equals two 10 ounce bags
- Rice Krispies cereal – or your favorite crispy rice cereal
- Golden Grahams cereal divided, these give it such a great graham cracker flavor. I’ve never seen a store brand version of these but if you have another brand, you can use it.
- mini chocolate chips – semi-sweet, I think the mini chips usually only come in semi-sweet. Regular chocolate chips can be swapped
- Hershey’s chocolate bars optional decoration
How To Make Smores Rice Krispies Treats
- Prepare a 9×13 inch baking dish with a large piece of parchment paper. Spray the parchment paper lightly with cooking spray, as sometimes the marshmallows can get sticky.
To get the parchment paper to lay easily in the pan, crumble it up in a ball and then unroll it. The creases from crumbling the paper will then help it sit better in the pan. Then place in the pan and lightly spray with cooking spray.
- In a very large pot melt butter over medium low heat. Measure one cup of mini marshmallows to the side, then pour the remaining marshmallows into the pot. Stir the entire time with a silicone spatula while the marshmallows melt. Remove the pan completely from the heat, then quickly add the vanilla and salt.
- Add 5 cups of Golden Grahams, 4 cups of Rice Krispies cereal to the marshmallow mixture. Fold in the cereal, pulling the marshmallow mixture from the bottom until the cereal is entirely coated.
- Pour the marshmallow cereal mixture into the pan, pressing very gently with the silicone spatula to fit the pan. Sprinkle the remaining cup of mini marshmallows, ½ cup of Golden Graham cereal and the ¼ cup of mini chocolate chips over the Rice Krispies treats. Spray an additional piece of parchment paper lightly with spray cooking oil, then use the paper to gently press the toppings into the top of the treats to make sure they stick. Add rectangles of Hershey’s chocolate to the top to decorate.
- Allow the treats to cool, they slice easier once cool to the touch. Then lift them out of the pan and slice into square pieces, and enjoy!
Cereal and Graham Cracker Variations
You can use all Rice Krispies instead of using Golden Grahams cereal, and then simply top with pieces of graham cracker. I find our family enjoys the crunch and flavor of the Golden Grahams, but you can swap it need be.
I don’t recommend you use crushed graham crackers in the marshmallow mixture instead of the Golden Grahams I find they get a little too soft mixed in, but graham crackers taste delicious added on top.
Cinnamon Toast Crunch cereal or the store brand versions can also work in a pinch. The s’more rice krispie treats will have some cinnamon flavor to them. Delicious all the same to make s’mores rice krispie treats.
Chocolate Chips and Chocolate Variations
Any kind of chocolate chips and bar chocolate can be used on top. If using all bar chocolate I recommend breaking into smaller pieces. I do like th add the hershey’s squares on top because it’s more of a classic s’mores look.
Melted chocolate can also be drizzled over the top.Just use the microwave at half power and a little bit of oil to make the chocolate melted and smooth to drizzle.
You can also swap the chocolate chips for peanut butter chips, white chocolate chops, milk chocolate chips or dark chocolate chips. Don’t be afraid to experiment a little. It can get a little too rich if you pile the chocolate on too much.
Marshmallow Variations
Large marshmallows can be used in the rice krispies treats instead of mini marshmallows. Look at the ounces on the bag to get about 20 ounces of marshmallows.
For the marshmallows used to decorate the top of the bars, I recommend cutting larger marshmallows in half and placing the sticky side down on top of the bats.
Why Are My S’mores Rice Krispies Treats Hard?
It can be tempting to turn up the heat to melt the butter and marshmallows faster, but keep the heat medium to medium low. If you bump the heat too much the sugar begins to crystalize which can cause this sweet treat to be too hard.
Also be sure to gently compress the treats into the pan when adding the mixture to the pan. If you press down too hard, it can sometimes cause the more rice krispie treats to be too hard.
How Long Will S’mores Rice Krispies Treats Last?
Expect these s’mores Rice Krispies treats will last for about 5-7 days if stored on the counter in an airtight covered container, but they do taste the best the day they are made.
If it is especially hot outside I’ll store the bars in the refrigerator, but keep in mind this can make them a little harder when biting into them.
