Gooey s'mores Rice Krispies treats are soft and gooey, with plenty of that chocolate, marshmallow and graham cracker flavor that you'll crave! No campfire needed for these easy treats that have just the right amount of sweetness.
Ingredients
6tablespoonsbutter
½teaspoonvanilla
⅛teaspoonsalt
20ouncesmini marshmallows - 20 ounces equals two 10 ounce bags
4cupsRice Krispies cereal
5 ½cupsGolden Grahams cereal divided
¼cupmini chocolate chips - semi sweet
2Hershey’s chocolate bars1.55 ounces total for two bars
Instructions
Prepare a 9x13 inch baking dish with a large piece of parchment paper. Spray the parchment paper lightly with cooking spray, as sometimes the marshmallows can get sticky.
In a very large pot melt the butter over medium low heat. Measure one cup of mini marshmallows to the side, then pour the remaining marshmallows into the pot. Stir the entire time with a silicone spatula while the marshmallows melt. Remove the pan completely from the heat, then quickly add the vanilla and salt.
Add 5 cups of Golden Grahams, 4 cups of Rice Krispies cereal to the marshmallow mixture. Fold in the cereal, pulling the marshmallow mixture from the bottom until the cereal is entirely coated.
Pour the marshmallow cereal mixture into the prepared pan, pressing very gently with the silicone spatula to fit the pan. Sprinkle the remaining cup of mini marshmallows, ½ cup of Golden Graham cereal and the ¼ cup of mini chocolate chips over the Rice Krispies treats. Spray an additional piece of parchment paper lightly with spray cooking oil, then use it to press the toppings gently into the top of the treats to make sure they stick. Add rectangles of Hershey’s chocolate to the top to decorate.
Allow the treats to cool, they slice easier once cool to the touch. Then lift them out of the pan, slice them into square pieces and enjoy!
Notes
It can be tempting to turn up the heat to melt the butter and marshmallows faster but keep the heat medium to medium low. If you bump the heat too much the sugar begins to crystalize which can cause the treats to be hard.
