Moist and gooey, this cozy chocolate chip zucchini bread will be a hit with your family and friends. Full of melty chocolate chips, moist zucchini and tender walnuts, this delicious loaf is perfect for breakfast or a snack, and is great to help meal prep for the week ahead.

1 Metal bread pan I used 9x5 inches
Ingredients
2cupszucchinigrated, around 2 medium-sized zucchini for two cups
2largeeggs
1/2cupwhite sugar
1/2cupbrown sugarlightly packed
3/4cupoilvegetable, avocado, olive or any cooking oil works
1teaspoonvanilla extract
1 1/2cupsflourall-purpose flour
1teaspoonbaking soda
1/2teaspoonbaking powder
1teaspoonsalt
1teaspooncinnamon
1/2teaspoonnutmeg
1cupchocolate chipssemi-sweet, plus extra for the top of the loaf
1/2cupwalnutschopped, plus extra for the top of the loaf
Instructions
Preheat oven to 325 degrees. Line a 9x5 loaf pan with parchment paper or spray the pan with cooking spray oil generously.
Grate the fresh zucchini in a food processor or into a medium bowl. With several paper towels, pat the zucchini dry to remove excess moisture. Set the zucchini to the side.
In a medium sized mixing bowl, add eggs, white sugar, brown sugar, oil, and vanilla, Mix with a silicone spatula until the sugar dissolves and is well mixed.
In a large bowl add flour, baking powder, baking soda, salt, cinnamon and nutmeg. Whisk together the dry ingredients until well blended.
Add half the flour mixture to wet ingredients and mix until fully incorporated. Then add the second half of the flour mixture and mix until a batter forms and the flour is fully mixed in.
Fold in the grated zucchini and mix well. Add the chocolate chips and walnuts and fold them into the batter.
Pour batter into the prepared pan. Add a few extra chocolate chips and walnut pieces to the top of the bread.
Bake for 60-65 minutes. After 45 minutes, check to make sure bread isn’t getting too dark on top. If it is getting dark, cover the pan with foil and continue baking until fully baked in the center. The bread is done when a toothpick comes out from the center clean without batter.
Remove the bread from oven and let cool for 10 minutes before removing from the pan onto a wire rack. Serve and enjoy!
