Forget the bun. This sloppy joe tater tot casserole layers all that saucy, savory filling under crispy tater tots and bubbly melted cheese for a one-pan dinner the whole family will ask for again.
Ingredients

½mediumoniondiced, white, yellow or sweet onion
½mediumbell pepperdiced, any color

14.5ouncesdiced tomatoes in juicecanned, use tomatoes and juice
1tablespoonapple cider vinegar
¾cupketchup
1tablespoonbrown sugar
1tablespoonWorcestershire sauce

1cupcheddar cheeseshredded
Instructions
Preheat the oven to 350. Spray a 9x13 casserole pan lightly with spray cooking oil.
Place a large skillet over medium high heat. Add the ground beef and cook until browned all the way through, 7-10 minutes. Drain any excess fat with a paper towel so the casserole doesn't end up too oily. Remove the ground beef and set to the side.

To the same skillet, add onion and bell pepper. Season with salt and pepper and cook until softened, about 3-4 minutes. Add garlic and cook for an additional minute until fragrant.

Return ground beef back to the pan with the peppers and onion. Add canned diced tomatoes, apple cider vinegar, ketchup, brown sugar, and Worcestershire sauce. Stir well, then bring the sloppy joe mixture to a simmer, about 5 minutes.

Pour the sloppy joe mixture into the 9x13 pan, spreading evenly in the pan. Top the sloppy joe layer with a single layer of tater tots in even rows.

Bake at 350 for 40 minutes, or until the tater tots are brown and crispy. Top with shredded cheese, then bake for an additional 5 minutes until melted. Serve and enjoy!

Notes
For extra crispy tater tots, bump the oven temperature up to 400°F for the last 5-10 minutes of baking.Never put a glass casserole dish or stoneware under the broiler, as the very high direct heat can cause it to crack or shatter. A metal baking pan is broiler safe.The tatertots don't need to be lined up in rows, it just looks prettier that way and gets crispier a little easier. You can also just toss the tater tots on top as long as they are in a single layer.
