This easy pico de gallo is a fresh salsa made with simple ingredients and ready in minutes. Perfect for tacos, chips, and quick family meals.
Ingredients
5mediumtomatoesabout 4 cups chopped
1mediumonionabout 1 cup chopped
1mediumbell pepperabout 1 cup chopped, optional
¼cupcilantrofresh, leaves only. See notes.
1mediumlime
½teaspoongarlic powderoptional
1/2 teaspoonsalt
Instructions
Dice the tomatoes, onion, and bell pepper into small pieces. Add the diced tomatoes, onion and bell pepper to a large mixing bowl.

Remove the cilantro leaves from the stems. Chop the cilantro leaves roughly, then add it to the mixing bowl.

Cut the lime in half. Squeeze the juice from both halves of the lime over the tomato mixture.

Add salt and garlic powder (optional) to the tomato mixture. Stir until well combined.

Stir the tomato mixture well until full combined. Serve with tortilla chips, over tacos or with other Mexican food and enjoy!
Notes
I used tomatoes on the vine, but I also really like using Roma tomatoes. 2 Roma tomatoes is about 1 cup of tomatoes, you would need about 8 Roma tomatoes for this recipe.Limes have about 2 tablespoons of juice. You can use jarred lime juice if you prefer. You can also swap out lemon juice if needed, though the flavor will be better with lime.Cilantro can be left out all together if you prefer. Fresh parsley can give a little freshness without adding the cilantro flavor. Most people either love or hate cilantro, so I won't tell you to lessen it if you dislike it.Nutrition estimates are based off 1 cup servings
