These tasty no-bake peanut butter oatmeal balls make a great lunchbox or afterschool snack. Sweetened with honey, this easy recipe is easy to prep and fun to enjoy!
Ingredients
1/4cupoatscan use quick oats or instant oats
1/3cupalmond flour
1/4cuphoney
1cuppeanut butter
Instructions
Cover a cookie sheet in parchment paper or aluminum foil sprayed very lightly with cooking oil.
Place almond flour and oats in a large mixing bowl and mix until combined.
Add peanut butter and honey to the oat mixture. Mix all ingredients well until combined with a spatula and it forms a soft dough.
Roll dough into 1 inch balls, about the size of a ping pong ball and place on the prepared cookie sheet not touching the other pieces.
Slide cookie sheet into freezer to help dough firm up for at least 20 minutes. Then enjoy!
Notes
If your dough is extra sticky and won't roll, try add more oats a tablespoon at a time until it firms up. Some peanut butter is stickier than others.Peanut butter energy bites can be stored in the fridge for about a week, or in the freezer for several months.You can eat these bites straight from the freezer, no need to defrost.Almond flour is used in this recipe, but more oats could easily be substituted if unavailable. Coconut flour is also a great substitute. The dough consistency may change a little.Maple syrup can be used to substitute as a sweetener.
