These no bake monster cookie energy balls mix up fast with oats, peanut butter, mini chocolate chips, and M&M’s. Roll and chill for a chewy, kid-friendly snack that packs great in lunchboxes.
Ingredients
2cupsquick cooking oats
1cupcreamy peanut butter
3tablespoonsmaple syrup
¼cupvanilla protein powderoptional
¼cupmini semi-sweet chocolate chips
¼cupmini M&Ms
Instructions
Line a baking sheet with parchment paper.
Add the oats, peanut butter, maple syrup, vanilla protein powder (optional), chocolate chips and M&Ms to a large mixing bowl. Stir together until combined.
2 cups quick cooking oats, 1 cup creamy peanut butter, 3 tablespoons maple syrup, ¼ cup vanilla protein powder, ¼ cup mini semi-sweet chocolate chips, ¼ cup mini M&Ms
Using a small cookie scoop or spoon, roll the dough into 16 even pieces, about 1 tablespoon each.
Place the energy balls on the baking sheet, leaving just enough space that they are not touching.
Place the bites in the refrigerator to chill for at least 30 minutes, or until firm. Then serve and enjoy!
Notes
You can use quick cooking oats or rolled oats with success. Instant oats can be used, but because of their smaller size the final result will be less chewy.I don't recommend using steel cut oats as they are cut really thick and need a lot more moisture. Steel cut oats can cause the bites to be crumbly.Adding a few extra M&Ms to the outside of the energy balls can make these look more fun, especially for kids.Sometimes when I have used other chocolate candies besides M&Ms, the color will bleed a little. I can usually avoid this by mixing everything but the chocolate chips and the M&Ms first to create a dough, then folding in the M&Ms and chocolate chips at the end.
