These festive Grinch brownies mix fudgy chocolate and mint Oreos, topped with creamy frosting for a delicious Christmas dessert, your new favorite Christmas treat!
Ingredients
For The Brownies
2largeeggs
1/2cupbuttersalted, melted, 1 stick
1/2cupbrown sugar
1/2cupwhite sugar
1teaspoonvanilla extract
1/2cupall-purpose flour
1/2cupunsweetened cocoa powder
¼teaspoonsalt
15regularmint Oreo cookies
For The Frosting
4ouncescream cheesesoftened
¼cupbuttersoften, salted
1 ¼cupspowdered sugar
1teaspoonvanilla extract
green food coloringgel food coloring will give you a more vibrant green color and is preferred, but you can use drip food coloring
5regularmint Oreo cookies
2teaspoonsred heart sprinklesflat sprinkles that are heart-shaped, sometimes called quins
Instructions
Making The Brownies
Preheat the oven to 350 degrees. Line an 8 x 8 pan with parchment paper and set to the side.
Crack the eggs into a large mixing bowl and whisk eggs with a whisk until the yolks are fully mixed. Add melted butter, brown sugar, white sugar and vanilla to the eggs, then mix well with a whisk.
Place flour, cocoa powder and salt into a medium sized mixing bowl. Mix well with a silicone spatula until just combined.
Add the dry ingredients to the wet ingredients. Mix together with a silicone spatula until well combined.
With a large knife and a cutting board, slice 15 mint Oreos into quarters. Fold the Oreo pieces into the brownie batter. Pour the batter into the prepared pan, spreading the batter evenly.
Bake the brownies for 25-28 minutes. You'll know the brownies are done when the center of the brownies are fudgy but not wet, you can check with a toothpick. Let the brownies cool completely in the pan before frosting, usually about an hour.
Making The Frosting And Decorating
Place the cream cheese and butter until smooth. Add vanilla, green food coloring and powdered sugar. Whisk together until smooth. Add more food coloring as needed to make the frosting green enough. Spread frosting over cooled brownies.
Chop the remaining five mint Oreo cookies into small pieces. Top the brownies with the chopped mint Oreos and red heart sprinkles.
Refrigerate the brownies for 1-2 hours to help set the frosting. Then slice and enjoy!
Notes
You can also line the pan with aluminum foil, but you then need to spray the foil with cooking oil, or the brownies will stick to the pan.Once the brownies have cooled some, you can place the pan in the refrigerator to speed up the cooling process.
