Greek chicken bowls are a dinner win for the whole family. Marinated chicken, fluffy rice, and all your favorite fresh toppings piled on so everyone builds their own bowl.
Ingredients
For The Chicken
2poundschicken breastscubed into 1 inch pieces
2tablespoonslemon juice
3/4cupsolive oil
1tablespoongreek seasoningGreek Freak is my favorite Greek seasoning
1/2teaspoongarlic powder
½teaspoonsalt
½teaspoonblack pepper
For The Bowls
4cupsrice, steamedabout 1/2 cup cooked rice per serving, use rice of choice
2cupscherry tomatoeshalved
2cupcucumberdiced
2cupskalamata olivespitted, sliced
1mediumred oniondiced
2cupsfeta cheeseabout 1/4 cup per serving
2cupstzatziki sauceabout 1/4 cup per serving
parsleyfresh, optional
Instructions
Prepping The Chicken
In a large bowl or gallon-sized zip top bag, add cubed chicken, lemon juice, olive oil, garlic powder, salt, and pepper. Toss until everything is coated. Let the chicken sit in the marinade in the refrigerator for at least 30 minutes. Dice and prep other toppings while the chicken marinates.

Prepping The Bowl Ingredients
Heat or cook the rice according to the package directions.
4 cups rice, steamed
Dice and slice other toppings such as cherry tomatoes, cucumber, olives and red onion while the chicken marinates.
2 cups cherry tomatoes, 2 cup cucumber, 2 cups kalamata olives, 1 medium red onion
Cooking The Chicken
Place a large skillet over medium-high heat and spray lightly with pan spray. Add the marinated chicken in a single layer to the pan. Cook over medium-high heat flipping and stirring occasionally for 9-10 minutes. The chicken is done when it is no longer pink in the center. The chicken will reach 165 degrees when measured with a meat thermometer.
Serving The Greek Chicken Bowls
Serve family style and let everyone add their own toppings or layer the bowls. Start with a scoop of warm rice. Add chicken, then add tomatoes, cucumber, olives, red onion, feta and a dollop of tzatziki. Sprinkle fresh parsley if desired, then enjoy!

Notes
I often will make my own tzatziki at home which is more of a greek garlic sauce with plain greek yogurt. Start with 2 cups plain greek yogurt (or three 5.3 ounces plain greek yogurts.) Add 1 tablespoon lemon juice, 1 tablespoon Greek seasoning, 1/2 teaspoon garlic powder and 1/4 teaspoon of salt. Mix well, then drizzle over bowls. This is the same sauce I use in my greek chicken wraps. My family likes it a little more then traditional tzatziki, but storebought tzatziki works just fine too!I find this recipe can make between 6-8 servings depending on how hungry we are. It's about 3 ounces of chicken per person, so if your family is a little more heavy handed with protein or toppings it may vary.You can always bulk up any of these ingredients to your own family's tastes, especially if there are ingredients that don't enjoy or you have pickier family members.
