These creamy garlic cream cheese mashed potatoes are the perfect side dish for any meal. Try them for a delicious holiday or Thanksgiving side dish.
Ingredients
For The Potatoes
3poundsrusset potatoespeeled and cut into chunks, see notes
2teaspoonsgarlicminced
4ouncescream cheesesoftened
1/2cupbuttersoftened
1/2cupsour cream
1cupheavy creamcan also use half and half
1cupparmesan cheeseshredded, divided
For The Seasoning
1teaspoonbasil
1teaspoonparsley
1teaspoonoregano
1 1/2teaspoonssalt
1/2teaspoonpepper
Instructions
Wash, peel and cut the potatoes into large 2 inch chunks. Place the potatoes in a large pot and cover with water. Bring the water to a boil and boil the potatoes for 15 to 20 minutes until they are fork tender.
Transfer the cooked potatoes to a colander to drain the potatoes and rinse with cold water. Allow to cool for at least 10-15 minutes.
Preheat the oven to 350 degrees and grease a 9x13 baking dish with nonstick cooking spray.
Place the cooked potatoes in a large mixing bowl. Add garlic, cream cheese, sour cream, and heavy cream to the bowl. Use a potato masher or hand mixer to mash the potatoes and blend until smooth.
Add 3/4 cup of parmesan cheese, basil, parsley, oregano, salt and pepper to the potatoes. Blend until the spices are well mixed into the potatoes.
Spread the mashed potatoes with cream cheese into the prepared baking dish and sprinkle with the remaining 1/4 cup of parmesan cheese and cover with aluminum foil. Bake for 30 minutes until warm and gooey, then serve and enjoy!
Notes
3 russet potatoes is about a pound, so for 3 pounds of potatoes you'll need about 9 russet potatoes.3 pounds of Yukon gold potatoes or red potatoes can also be used in place of the russets.Garlic cloves are each about 1/2 teaspoon of minced garlic, so for 3 pounds of potatoes, you would need about four cloves of fresh garlic.
