Ingredients
1/4CupOats
1/3CupAlmond Flour
1/4CupHoney
1CupPeanut Butter
Instructions
Cover a cookie sheet in parchment paper.
Add almond flour and oats to a large bowl. Stir until combined.
Add peanut butter and honey to bowl. Mix all ingredients well until combined with a spatula until it forms a soft dough.
Taste and add extra honey if desired to sweeten.
Roll dough into 1 inch balls, about the size of a ping pong ball and place on a cookie sheet covered in parchment paper.
Slide cookie sheet into freezer to help dough firm up for 1-2 hours.
Notes
If your dough is extra sticky and won't roll, try add more oats a tablespoon at a time until it firms up. Some peanut butter is stickier than others.
Peanut butter energy bites can be stored in the fridge for about a week, or in the freezer for several months.
You can eat these bites straight from the freezer, no need to defrost.
Almond flour is used in this recipe, but more oats could easily be substituted if unavailable. Coconut flour is also a great substitute. The dough consistency may change a little.
Maple syrup can be used to substitute as a sweetener. Babies under the age of one should not consume raw honey.
