  • ⁣⁣ Hey, long time no see! Double tap if you’re feeling like a 🌵 today, spiky and sweet all in one!⁣⁣ -⁣⁣ You may have remembered I last left you when we were somewhere in Kansas, it was well over 100 degrees and we lost two tires, our air conditioner (and eventually the wheel well) in our versa. Did I mention it had well over 100k miles on it before we started the trip? 🤪⁣⁣ We’ve since purchased a new car. 🙈 -⁣⁣ Thank you for all of your kind notes, We made it to Arizona and for a little while? Life just got hard as we all transitioned. We’ve since ran into tarantulas 🕷 cactus 🌵 bears 🐻 and coyotes 🐕. Arizona bites back ya’ll. But I’m back in the kitchen now in our new home.⁣⁣ -⁣⁣ Meanwhile I couldn’t help but share these adorable cactus 🌵 cupcakes with you that we had for my birthday last month thanks to Grama’s bakery!   • Some big news! School may be out here but it’s time to pack a few more boxes other then lunchboxes. My husband Noel (or Mr. OnMyKidsPlate as he’s been called 😉) @astronoel has officially accepted a tenure track astronomy professor position in Arizona. . This means we will be moving to Arizona from Toledo, Ohio in mid July and having another big adventure as a family! We are super proud of Noel and excited for this new chapter as a family. Thank you all for your understanding and your sweet DMs you’ve sent in the past weeks, your continued kind words and notes are so encouraging. I’m looking forward to bringing you more recipes and fun from the desert soon! Now anyone know have any good cactus recipes? 🌵 😘 #onmykidsplate
  • Breakfast for dinner for Cinco de Mayo? Yes please! 🥳 🌮 About a week or so ago in my Instagram stories we were talking about easy ways to use frozen veggies in meals. This broccoli and cheese breakfast quesadilla is a favorite way to use frozen broccoli to make the meal go even faster! We serve this quesadilla up for breakfast, but sometimes it’s so good? We have this for dinner. 😁 This is a fast and easy recipe to celebrate Cinco de Mayo with the kids, even if you had no plans.   • Yesterday I mentioned in stories that I was cooking up something in the #instantpot Tah-dah, the kids can’t resist this JUICY Pork Tenderloin with a honey balsamic sauce. It’s ready in under 30 minutes plus still lean and light for a weeknight dinner. The whole family will love that slightly sweet but super simple sauce! In fact I sent some to a friend’s house and they loved it too.   • I’m not sure who had more fun at @kalahariresorts the kid, or the parents! We had such a blast from tons of water slides for all sized kids, to the lazy river (which we floated down a bunch!), the wave pool, the indoor/outdoor hot tub- their was TONS to do. I can’t say enough positive things about our stay. (Ad) #lovekalahari ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I’ve popped some of the highlights of our visit in stories, and I’ll be adding a few more.
